■ Tart dough
40g…butter
30g…powder sugar
20g…egg yolk
20g…almond powder
90g…Flour
① Cream butter and add powdered sugar
② Add egg yolk and almond powder to the above
③ Combine the cake flour so as to cut the whole sieve
④ Wrap the dough in plastic wrap and let it rest in the refrigerator for about 2 hours.
⑤ Stretch the dough to a thickness of 3 mm, fit the dough into the mold and let it rest in the refrigerator for 1 hour.
⑥ To prevent the cake from losing its shape, cover it with tart stones and adzuki beans and bake in an oven preheated to 170℃ for 15 minutes.
Remove the tart stone and bake for another 15 minutes.

50g…whole egg
34g…egg yolk
70g…granulated
7g …gelatin
200g…cream cheese
100ml…heavy cream
■orange sauce
・Preparation
Beat the heavy cream for 6 minutes
put back the gelatin
①Take two orange peels and squeeze out the juice.
*Wash the oranges.
②Combine the whole egg, egg yolk, and granulated sugar, add orange peel and juice, and heat over medium heat until thickened.
③ Add gelatin that has been reconstituted and combine with cream cheese.
④ Add fresh cream and mix and pour into the mold
⑤ Pour in the orange curd left over for decoration and chill in the refrigerator for half a day to harden.
