Thank You so much. I just recently started dehydrating. I'm 60 something, disabled on a fixed income. Canning is just to much to handle these days. But I can sit and dice and chop all day long then dehydrate. Take Care and God Bless.

Ms V, I just seriously adore you. I’ve watched your videos for about 4 months, and I’ve learned so much from you. I’m 58 yrs old, and had NEVER pressure canned before, until yesterday when I left my fears on the floor and took the leap. I pressure canned soaked pintos and red beans. They turned out great. I’ve water bath canned for20+ yrs, but was always too afraid to pressure can. It was so rewarding. I’m hooked. Thanks to your videos, I felt confident. I sure wish I was your neighbor. You are a godsend. Thank you so much for teaching this gal some new ‘tricks’. I adore you.

I absolutely LOVE these dehydrating and canning videos! I have a well stocked pantry thanks to your inspiration! My stocked pantry kept my WHOLE family well fed during this pandemic, when if things could be found the prices were out of this world! My stocked pantry not only helped us stay fed, but also allowed me to not have to shop, giving other families a chance to have what I would have purchased! I'll keep my pantry stocked, because who actually knows if we are going to get another wave of this COVID-19... thank you for your inspiration Love, DANIELLE from NY!

@Susie Goodwin I've started sourcing all that I can from local farmers, especially meat! I have a standing order for 40 lbs of split chicken breast from a local free range organic poultry farm, which I debone, and then use the bone and skin for broth. Then the scraps get ground and mixed in with the dog food... i have a half a beef on order for this winter. I have a substantial garden in, and I restock what I can now that things are becoming more available, dehydrating and canning everything I can to save freezer space for meat... we keep about 3 bags of frozen veg just so that when they eat some say corn or broccoli with a steak or roasted chicken dinner its available... everything else is dehydrated or canned! Nothing goes to waste in our home if I can help it!

My dehydrator seems to always be running. Kale, onions, celery, herbs, potato, spinach and what ever else I can think of.

Hello from sunny Queensland Australia I Just thought to drop you a line to say any frozen vegetable can be dehydrated including broccoli. We dehydrate our frozen vegetables - all sorts and mix some of them all together for soups, stews, noodles and the slow cooker. and keep a large jar full for everyday use. the rest can be vacume sealed in bags to refill the jar when needed. Buy the vegetables in bulk when on sale - fill the freezer and work your way through it. you always have vegetables on hand that doesn't take up the freezer space other that when you buy the vegetables. And buying fresh when cheap in season and blanching you can either freeze them to work through them, or dehydrate them. In the end it saves money. Have a nice day.

I think to myself why I cant think of the simplest things that I see on your Channel. I just started dehydrating and I am always having food drop in that center hole. MAKES ME SO MAD!!! Then I watch yr video and BAM!! My problem is solved!!! Cover the hole with a jar. SIMPLE!!! 😉 THANKS Miss V

Thank you, I have been trying to buy extra fresh stuff to dehydrated or can with the ‘bonus’ EBT Kentucky is giving us because of the mess, but I hadn’t been stocking frozen because I don’t trust our freezer at all (we rent), but frozen is cheaper than fresh pretty much always!!

Last year I bought a nesco and it's been a game changer and a money saver. Mine came with only 2 mesh trays and one fruit roll up tray so I used parchment for the first while then I kind of made my own mesh type trays. I went to the dollar store and purchased a package of those thin clear BPA free cutting mats and cut them in circles. Then took a hole punch that I bought at the dollar store too and punched holes in the cutting mats and walla cheap meshs mats. For less than 4 dollars I have 6 mesh mats now that work great and are totally safe and washable. 😉

I'm with you, Bev! From the end of July through November, I only store meat, a couple packs of veg that can be pressure canned, and whatever can be consumed in a few days in my freezer. During that time period is when we seem to get the worst hurricanes here, and if the power goes out, and it's possible that the power can be out from one to four weeks, I start canning everything in the freezer as it thaws out. For that reason, whenever I find a sale on frozen veg, I dehydrate them. They take up so much less space and store so much easier that way! They also never get that "funky freezer" taste.

I've already filled 12 half gallon jars with mixed veg alone. We should be thinking of a few years ahead in supplies. Freezers can fail, and so can good gardening weather. I've also been drying commercial hash browns for storage, same with sweet potatoes when on sale or clearance.

Hi Bev, I have dehydrated frozen broccoli and they didn't need to be sliced. I did it as an experiment with a small bag and it worked like a gem. Of course, if the piece was huge I just cut it in half and it worked great. Haven't done cauliflower but would think it would be about the same. Please note that when I put the dehydrated broccoli in jars to vacuum seal I left the pieces unbroken so they do take up more space and jars but I figured hey, I just made freezer room I can live with it. Thanks! My nesco came this week. I had found bags of frozen mixed veggies for .25 cents a bag awhile back. Needless to say my freezer had quite a few. 10 bags going in for it's maiden voyage😊

Great Vid, Bev! I love dehydrating frozen veggies. Makes life EASY! I even do it with big cans of veg, but the frozen, its best if I DON'T find them on sale, the hubs says, lol. He's still afraid I'm gonna dehydrate him if he says too much. 450 for hubs, right, 135 for veg? 😆

I have made my own mesh inserts for my dehydrator using plastic mesh sheets from the craft store. You know, the ones that you cover with stitches of yarn to make tissue holders and stuff.

Dehydrated broccli is great and stores like any other veggie, it's never on sale that we can find but we still keep an abundance in the pantry.

Years ago hamburger helper used to sell a beef stew version that was my absolute favorite. I don’t care for any of their Italian or Mexican versions of stuff. Haven’t been able to find their beef stew in over 20 years. Since I started watching you a few years back I am considering trying my hand at making up my own. I just do t know their sauce recipe but it had dehydrated sliced potatoes, and dehydrated peas and carrots. It was really good.

I know you could have canned these also, but less fuss and less storage room? Perhaps also better texture when used? I have a dehydrator, need to get the adaptor to seal mason jars. Can you put these right into soup if you start with extra liquid? Love you Mrs Volfie from the Half Acre Homestead 💕

I did this for the first time last year and it worked so well. I just finished it up a few months ago. I love the idea and so much easier than chopping all them veg and blanching etc. great video Bev 🌷🇨🇦

The steams are not so desirable to eat dried but I left them on to see how they do after rehydrating . Thanks again

I dehydrate both broccoli and cauliflower in chunks. Works best if you blanch first and dry really well. They take a lot longer to re-hydrate than other veg, but don't fall apart like they do if you cut them small. I also do the stems--they do really well in soups.

I need to do this! My freezer is filling up, thankfully God has been so good to us in the garden this year! It's been 114 heat index though so now I know why my great Aunt had like 6 freezers, LOL! TEXAS! I got another old one right before the Covid scare, thank goodness!

Have dehydrated raw cauliflower. They turned brown, they still taste like cauliflower just brown in color. Next time I am going to soak them in some lemon water first.

Oh thank you! My food dehydrator just came in! I’ve never done it before. I have mixed veggies in the freezer I have to take care of as there is no room for the veggies to come from the garden. And it’s strawberries next weekend, how thin do I cut strawberries for dehydrating? Thank you again!

Thanks for another great video. I have a bountiful harvest of pears that I am planning to dehydrate. I have a dehydrator, but have never used it for long term storage of foods. Do I need an adaptor to seal the mason jars or do I just screw the lid on tight. Also how long can dehydrated fruit last in the pantry?

Love watching and learning from you, wow did not know could do this. My question is, I put carrots in the freezer about a month ago, can I take them out of freezer and dehydrate frozen? Be kind of fit in my dishwasher if I lay them flat but like future Homesteader says there's more than one way to skin a cat. Squirt some Dawn and vinegar mix onto a kitchen scrubbing brush and gently just brushed the soap and vinegar on to all the trays let's it throw them in your bathtub and rinse them off

I dehydrate frozen cauliflower and broccoli and all though it does darken some it rehydrate just fine. I do break it into much smaller pieces.

when I use frozen items (veggies or fruit), I've always rinsed them before using. I figure that I don't know where that water/ice came from that's on them. Can you do that with these veggies and still dehydrate them---would I need to 'dry' them first? Thanks for the help... :)

I tried dehydrating cauliflower. Got them dry but they smelled sulphuric. I dry just about everything else but not that.

I tried dehydrating frozen green beans in a small solar oven, which is a longer process. Here’s what happened: the color disappeared! They turned brown! It was a frightening experience. What are they doing to the food?!

We love the smell of onions dehydrating, that’s actually what got my SO to participate in preservation more than just grudgingly, now at the end of every month he gleefully slices any remaining onions so they can be dehydrated, he even figured out to use his carving knife (it had one of those perfect slice pieces) ! Our one dehydrator is a bit to warm but that actually works because the onions caramelize a bit as the dry and now everyone is eating them like chips lol.

I DE hydrate mine in the porch like I did my vegetables or in my pantry blanching the onions helps the smell and they drink DE hydrate faster. But garlic there's no getting around that you can put it out on your front porch or on your veranda but it doesn't bother me the smell of garlic lol obviously!

I've tried broccoli. When I went back later to use it the florets are starting to turn brown.

Was wondering...did you blanch them first (or use a citric acid solution)? Perhaps these measures might help them to retain their color. We love broccoli and I too was wondering how it would turn out dehydrating them.

I did broccoli 2yrs ago from frozen. I sliced, dried & vacuum sealed. It started turning brown around 6mo, so I used it up.

I had plastic canvas sheets from a former Hobby and just cut them to fit , they work beautifully , just wash with everything else.

I wondered if that would work or if they would melt. I think a lot of the "food" you can buy in a grocery isn't "food grade" lol

@@cherminn2882 Thank you! I did a few thingswith those back in the 80s lol, and when i looked at the price of the sheets for dehydrators recently I thought of them! I will pick some up now.

I've never thought to do broccoli or cauliflower. I would think they were to bulky and then rehydrating them I think they'd just be mush. Unless you chop everything small and just use it for flavoring like in mac and cheese or a noodle side dish...it just doesn't sound appealing to me!

Bev, we are on the same wave length. I've been dehydrating frozen mixed veggies also. I also store mine in the half gallon jars. Always enjoy your videos.
