Refrigerator Dill Pickles - a quick, easy, and delicious quick pickles recipe! Learn how to make the BEST homemade pickled cucumber recipe that is slightly sweet, a little tangy, and has a drink-worthy juice that is absolutely addicting!

INGREDIENTS:
⅔ cup distilled white vinegar
⅓ cup water
1 ¼ tsp. salt
3 Tbsp. sugar
2 cloves garlic whole
1 tsp. peppercorns
1 pinch red pepper
3 dill sprigs
4-5 cocktail cucumbers cut into 4 spears
INSTRUCTIONS:
Add vinegar, water, salt, and sugar to a medium-sized pot or sauce pan and bring to a boil.
Reduce heat to low and simmer for 5 minutes or until sugar is completely dissolved.
Place garlic cloves, peppercorns, red pepper flake, and dill sprigs in the bottom of a 16-oz. mason jar.
Add cucumber spears to the jar in a vertical orientation. Pour vinegar solution over cucumbers and add additional water as needed to completely cover the cucumbers.
Refrigerate pickles at least overnight or up to 3-4 days for the best results. Pickles will keep well in the refrigerator for up to 4 months and will slowly lose their crispness after that.
RECIPE NOTES:
Nutritional information is an estimate based on only half of the solution being consumed.
A 16-oz. mason jar works best. The wide mouth jars will also work equally as well.

These are our favorite pickles to make. We love the taste, which is not too dill. The only thing we did differently was to add a homegrown pepper from our garden to each jar and to give them a water bath at 180 degrees for 30 minutes to increase the shelf life. They are amazing and everyone who tastes them loves them. And talking about easy. Thanks for sharing your recipe and video, which was fun to watch!

I recently made these with cucumbers from the garden. Love them. Ive tried recipes with apple cider vinegar and they end up tasting like nothing but apple cider vinegar. These are delicious.

I was raised in Japan and we eat pickles (cucumber, radish, egg plants, etc, etc, daily with rice) they are sooo good! I’m excited to try this recipe! Thank you 🙏

Am i supposed to put the hot solution in fridge right away? Or let the jars cool down 1st? Hence dont want to break the glass in fridge.

I tried it with Persian cucumbers one time. it didn't work.they turned all mushy! Now I just use the regular pickling pickles.👍✌

Whenever i watch cooking tutorials they always have first world stuff like special mini cucumbers that come in a bag and things like dill which i can never find haha.

Made these yesterday and I thought they so perfect. Easy to make, delicious, crunchy and tarte. I added mustard seed as I don't like garlic in my pickles. Only wish there was a way to make them last longer in the fridge and still maintain that crunch. Thank you!

I was curious about that too. I googled and found this ... "Secure lids, and place in the refrigerator. The pickles will be ready to eat in 4 days, much better if you wait a week, and even better if you can wait 2 weeks before sampling. They will keep in the refrigerator for 3 to 4 months but will start to lose their crunch after that.Jul 1, 2019" How long did you find the crunch lasted for yours?

This sounds like a really good recipe! Do you know if they would last for a few months in the fridge over winter? Or would you have to can them in hot bath with same recipe?

These last for about 1-2 weeks in the fridge. If you want them to last longer you'd have to do the entire water bath canning process. :)

I have larger cucumbers from the garden, dried dill, a jar of crushed garlic. Can I use these as substitute ingredients?

Yes you absolutely can! You may want to decrease how much dried dill you use as this can be pretty potent. Also, if your cucumbers are seedless you can remove the seeds before pickling if you want seedless pickles. Can't wait to hear what you think, Irene :)

You'll want it to have cooled down slightly (so not still boiling), but it does not need to be room temp.

The solution was not enough to cover in a 16oz Mason jar..had to add too much water..can I double the solution recipe and top off with water?

Yes! You can use another type of sugar substitute if you'd like or leave it out completely :). They might be a bit tangier from the lack of sweetener though!

Yes! You absolutely can substitute with Stevia or another non-nutritive sweetener. You can also leave the sugar out completely if you don't want sweet pickles. Thanks for the question, Randall!

Hey I just made your recipe! I was looking at other recipes and they said theirs isn’t edible until like 4 weeks or else it still taste cucumber like why is yours edible in a few hours? And also wondering if I should have sanitized the jar or cap, or if it matters did you?

I think it just comes down to preference and how long your actually able to refrain from eating them while they sit......notice how she said they keep getting better over time.....I'm guessing the amount of time she gives in this video(4 hours to overnight)is jus how long it takes to notice a change in flavor from cucumber to pickle......achieving the ideal dill flavor with the vinegar I'd imagine would be a longer process......but idk just an educated guess tho I'm no pickle expert although I do love them and will be experimenting on making them because of this video

I've watched a bunch of KZfaq videos on this to get a feel for the method. You don't mention whether or not you cool the brine before adding them to your jars... Could you let me know if you do or don't? Does it matter?

Hey, i made it yesterday! But today it turns out too sour. Eventhough i decrease the amount of vinegar and put more water and sugar. Any idea what should i do to decrease the sour taste? I just add more water on it. Don't know whether it works

Hmmm. The vinegar might not have been a good quality one or was old? I would try adding a bit more water and sugar like you're doing, Melody!

My 11 year old loves baby dills but recently I am unable to find them at the supermarket. I am hoping that this could be a good substitute. They are in the fridge 2 hours now and he is counting down the minutes

@@atrilabban3649 Yay! That's awesome. So happy ya'll enjoyed them! You can definitely try reusing the liquid, but the pickles may not come out quite as flavorful (since some of the cucumber flavor has now seeped into the juice.) Would love to know how it turns out for you if you try it though!

No you don't! You can add as little or as much dill as you'd like - or none at all!

"Canning salt" is preferred, but yes you can use iodized salt. Pickle crisp is ok to use also, might keep them crunchier a bit longer

Lulee Tomas little granules you use for pickles to keep them crunchy. I got some in the canning section at Walmart. They work great

As I'm writing this comment my brine is cooling, since my only available jar is a reused, oversized garlic jar. I'll be sampling their progress starting in two days. My first time with recipes is always used for tweaking the flavoring proportions; it's informational more than anything.

I bought Kirby cucumbers, just two, and used what I already had: white balsamic and white wine vinegars diluted with water, pink salt from Dollar Tree, peppercorns, garlic powder, a pinch of red pepper flakes and a drop of agave syrup. My brine would work as very short term preservation of any vegetables that can stand up to sitting in liquid for a week or so without turning mushy.

I have received a ton of cucumbers,and was wondering what to do with them until now! Some are larger than others,but I will cut them down to fit my jars. I don't have the small cocktail size so I hope they will still be as good.

OK...Heres what I did and this is what I got! my ratios for a Quart Jar 1 Cup Distilled WHITE VINEGAR 1 Cup water 1/8 cup Sugar 1 table spoon salt bay leaves and a splash of Ball Seasoning My pickles came out Crunchy Sweet Butter and Bread style, I want DILL!!! LOL What did I do wrong?

It's been somewhat of a trend for awhile now to name girls after places. One of Princess Diana's young bridesmaids in 1981 was named India. Since then, I've heard of Paris, Brooklyn, Chicago.

Kirby's cost .79 per lb. by me. I can make pickles 3X cheaper than what Claussen pickles cost that are as just as good.

Good recipe if you cut the sugar a lot, it’s fine if you like sweet pickles but dill pickles should t be sweet…

These are not dill pickles! These are sweet n sour or watermelon pickles or sandwich pickles. Change your title! But these are not Dill! It’s the Sugar that kills them! No sugar! Sorry but somebody needs to tell you!

I'm sorry but that one third cup water to 2/3 cup vinegar was way too strong for my families taste they couldn"t eat them ended up having to throw them away and start over I found a recipe that was equal parts water to vinegar and that was a lot more to my family's liking. So I appreciate the info but not the pickles it made the kids face crunch up and shake their heads and say yuck but maybe some people like a pickle that makes your hair stand up LOL

All vinegar is based off the same chemical, acetic acid. And trust me, what you buy in the store is much less pure than anything you'd find in a scientific laboratory
