PAARCHA KARAHI WRITTEN RECIPE :
Ingredients :
Beef paarcha flattened 500 gm
Ginger garlic paste 1 tbsp
Oil ¼ cup
Chili powder 1 ½ tsp
Black pepper ½ tsp
Salt 1 tsp
Yogurt 4 tbsp
Allspice powder ½ tsp
Papaya raw ground 1 tbsp
Ingredients for Karahi :
Clarified butter ½ cup
Chopped ginger 1 tbsp
Green chilies cut lengthwise 3
Tomatoes large finely chopped 2
Yogurt ½ cup
Crushed red pepper 1 tsp
Black pepper ½ tsp
Salt ½ tsp
Crushed coriander 1 tsp
Roasted n crushed cumin 1 tsp
Ginger julienne 2 tbsp
Green chili julienne 2
Coriander leaves for garnish
METHOD :
Marinate pasanday with ginger garlic, oil, chili powder, papaya, black pepper, salt, yogurt and allspice, mix well, keep it for 30 mins, cook it in the pressure cooker till tender. Heat ghee in a wok, fry the cooked paarchay for 2 mins, add ginger garlic and green chilies, fry for another 5 mins, add chopped tomatoes and yogurt, saute at high flame till tomatoes nicely cooked and yogurt water dries, as soon as the ghee begins to separate, add in all the spices and salt, garnish with coriander, ginger and green chilies.
BHUNA RESHA KEBAB WRITTEN RECIPE :
Ingredients :
Beef boneless 500 gm
Ginger garlic paste 2 tbsp
Yogurt 4 tbsp
Tomatoes blended 2
Onion ground 1
Roasted & grounded coriander 1 tsp
Roasted & grounded cumin 1 tsp
Crushed red pepper 1 tsp
Chili powder 1 tsp
Turmeric ¼ tsp
Allspice ½ tsp
Black pepper ½ tsp
Chili powder 1 tsp
Salt 1 tsp
Green cardamom ½ tsp
Cloves powder ¼ tsp
Clarified butter ¼ cup
To Make Kebabs :
Bread crumbs ½ cup
Onion chopped and sautéd 2
Green chilies chopped and sautéd 3
Coriander leaves chopped ½ bunch
Mint leaves chopped 2 tbsp
Egg 1
METHOD :
Heat ghee or oil in a pressure cooker, add beef cubes with all the ingredients, fry till oil separates, add little water and pressure cook till meat is super tender and all water dries, cool the beef and chopperized in food processor or shredded finely, now to the shredded meat add chopped coriander and mint, sautéd onion and green chilies, add bread crumbs and mi well, shape the mixture into kebabs, shallow fry.
