Palmyra is very common in this areas. Used to make this over 30 years ago from scratch back then we didn't have yeast as the palm juice contains natural fermentation agent but take 4-5hrs for it to work and I had to hand mill overnight soaked rice to make creamy liquid then drain water from it by using homemade cotton bag( now we use processed flour), hand grated coconut to make cream and milk and so on. It took almost a whole day to make it but the end result was worth. Cheers from Thai expat in Aus.
