Ingredients:
1 Packet Active Dry Yeast 1/4oz (7.5g)
1/4 Cup Warm Water 100°F-110°F (60ml)
3/4 Cup Sugar (143g)
1 1/8 Cup Butter, Softened (226g)
4 Eggs, Room Temperature
1/4 Teaspoon Salt (1.5g)
1 Tablespoon Orange Zest (6g)
3 1/2 Cup All Purpose Flour (490g)
Egg Wash (1 Egg Yolk+1 Tablespoon Water)
Granulated Sugar for Sprinkling
Directions:
1. In a small bowl, mix together the yeast, warm water and a pinch of sugar. Let stand to proof for at least 5 minutes.
2. In a large mixing bowl, beat the sugar and butter until light and fluffy. Add in one egg at a time, beating just until combined. Stir in the salt and orange zest. Gradually fold in the flour until a soft dough forms. Lightly coat a large bowl with cooking spray and transfer the dough to it. Cover with plastic wrap and a towel. Let stand in a warm place for 3 to 5 hours or until the dough doubles in size.
3. Turn out dough onto a floured work surface. Take a small amount of dough and shape into a ball about 2 inches wide. Take 4 small sections of dough and shape into 4 bones. Shape the rest of the dough into a round shape. Place this on a parchment lined baking sheet. Apply a small amount of water at the center of the dough and in four corners forming a cross shape. Place the small dough ball at the center, and the 4 dough bones at each section forming a cross. Brush with egg wash.
3. Bake in a preheated oven at 450°F for 10 minutes, then lower the temperature to 325°F and continue to bake for 20 to 25 minutes or until golden brown and an inserted toothpick comes out clean. While still warm, sprinkle or rub the bread with sugar. Let stand on a wire and cool completely.
