Pan de Muerto (Bread of the Dead) commemorates Mexico’s Dia de los Muertos (Day of the Dead). It’s a simple & delicious sweet bread.

RECIPE INGREDIENTS & MEASUREMENTS:
Yeast Proof Mixture:
1/2 cup warm milk ~100F (120ml)
2 tbsp. Sugar (20g)
3 tbsp flour (30g)
1 1/2 tsp. Dry Active Yeast (4g)
Dough:
4 cups flour + 4 tbsp. (552g)
4 eggs (280g)
2/3 cups butter (11 tbsp. or 150g)
1/2 cup sugar (100g)
1/2 tsp. Salt (3g)
2 tsp. Ground Anise Seeds (5g)
2 tbsp. Orange Flower Blossom Water (30ml)
3 tbsp. Orange Zest (30g) - usually 2 oranges yields about 4 tbsp. (40g) of zest
Glaze:
2/3 cup Orange Juice (~200ml)
1 tbsp. Orange Zest (10g)
1/2 cup sugar (100g)
Sugar Garnish:
2 tbsp. White Sugar (20g)
SUBSTITUTIONS:
Butter: Margarine or Shortening.
Milk: Any non-dairy alternative may be used so long as it’s unsweetened & unflavored.
Anise Seeds: fennel seeds, cinnamon, or some ground five spice powder works great in a pinch.
Orange Flower Blossom Water: if you can’t locate his you can add 2 tbsp. (20g) more of orange zest.
Sugar Garnish: 2 tbsp. Sesame Seeds (20g)

Notes:
If well wrapped leftover bread can be stored at room temperature for up to 3 - 5 days.
** Always wash hands before beginning a recipe and after handling raw eggs. Sanitize work surfaces. Sorry guys the science geek in me just has to say this even though everyone knows this already. 😅

El pan de muerto es una delicia la panadería mexicana y del mundo! Nosotros hicimos una versión similar en nuestro canal, pero aquí en Francia para compartirla y fue un éxito, muy esponjoso y con sabor a naranja como un toque diferente. Muy buena receta y video, gracias por compartir.

I'm not sure if this would spark controversy or not, but I don't see Dia de los Muertos as just "a Mexican Holiday". I see it as a holiday to remember loved ones that passed away. As long as they're remembered by telling stories about them to your friends, family, and loved ones, they're never truly forgotten. Example, when my mom was alive (gran mal/ongoing medical condition), I remember that she would hide some of her favorite snacks. When I was a little girl back then, I found a bag of Pepperidgefarm's Snickerdoodles from underneath her waterbed. I snuck in one. Then, another. And another. Suddenly, I heard my mom behind me asking me "What are you doing?". I turned and looked up to face her and tried to say "Nothing" or "I don't know" but my mouth was full, that I sounded like Kenny from South Park. She laughed while she went to the kitchen for a cup of milk for me. I still remember that like it was yesterday.

I haven't commented or even been on KZfaq in like two-three weeks. Mi abuelita just flew in from Madrid. She grew up in Morelia ,Michoacan. Making this bread is near and dear to my heart. This literally brought back some of my fondest childhood memories with Mama and Abuelita. I love your videos and miss ya when Im outta state. Muchos besos y abrazos. My abuelo’s family was originally from Xàtiva, Valencia in Spain and he grew up in Sinaloa Mexico. I truly miss those childhood days spent with both my maternal & paternal grandparents. Ay! Pan! I love Pan! They look so yummy! Reminds me all the breads at my grandparents' Panaderia back when I was an innocent little kid. Sciencia y Pan are perfect combo. I love how you infuse science on your cooking. After fermentation, the Yeast cell produce small CO2 as a by product of...What? Who? Why? LOL. You LOST me there...not! Amazing work making those Pan de Muerto. I am surprised the towel did not caught on fire at the oven. Is it a special kind by anychance? Btw, on the altar table is she your maternal abuela? I tried this recipe, my dough seemed kinda dry though. I added milk little by little until it got a nice consistency.

I've followed the recipe twice and both times the dough is really sticky. Is it possible to over mix it? I've had it in the mixer for 15mins with the dough hook

I made this bread for the first time this year. It is very delicious. I had one problem, the design on top moved when I baked the bread. I think it was because I may have nor secured the design to the main loaf well enough. Any one have any ideas why this happened? The bread expanded during baking which caused design to move.
