Pan de Muerto (Bread of the Dead) commemorates Mexico’s Dia de los Muertos (Day of the Dead). It’s a simple & delicious sweet bread.

RECIPE INGREDIENTS & MEASUREMENTS:
Yeast Proof Mixture:
1/2 cup warm milk ~100F (120ml)
2 tbsp. Sugar (20g)
3 tbsp flour (30g)
1 1/2 tsp. Dry Active Yeast (4g)
Dough:
4 cups flour + 4 tbsp. (552g)
4 eggs (280g)
2/3 cups butter (11 tbsp. or 150g)
1/2 cup sugar (100g)
1/2 tsp. Salt (3g)
2 tsp. Ground Anise Seeds (5g)
2 tbsp. Orange Flower Blossom Water (30ml)
3 tbsp. Orange Zest (30g) - usually 2 oranges yields about 4 tbsp. (40g) of zest
Glaze:
2/3 cup Orange Juice (~200ml)
1 tbsp. Orange Zest (10g)
1/2 cup sugar (100g)
Sugar Garnish:
2 tbsp. White Sugar (20g)
SUBSTITUTIONS:
Butter: Margarine or Shortening.
Milk: Any non-dairy alternative may be used so long as it’s unsweetened & unflavored.
Anise Seeds: fennel seeds, cinnamon, or some ground five spice powder works great in a pinch.
Orange Flower Blossom Water: if you can’t locate his you can add 2 tbsp. (20g) more of orange zest.
Sugar Garnish: 2 tbsp. Sesame Seeds (20g)

Notes:
If well wrapped leftover bread can be stored at room temperature for up to 3 - 5 days.
** Always wash hands before beginning a recipe and after handling raw eggs. Sanitize work surfaces. Sorry guys the science geek in me just has to say this even though everyone knows this already. 😅
