Chef Tom reminds me of a smaller more clean cut version of Action Bronson lol. I bet hes a cool dude to have a bbq with and throw back some cold ones.

Ever since I made my wife pan seared rib eye steak no matter how good I think any other techniques for cooking rib eye is, she still prefers this method. I do it on the stove top with just salt and pepper btw. Everyone that has tried it names it the best steak they've ever had. Super simple to make as well.

I'm totally with you on the Rosemary. It does make for an amazing steak! So, did you leave the KJ lid open during the entire cook? If so, I bet that fire was blazing HOT!!!! Fine looking steak at the end Tom. I do love a nice Ribeye brother!!! Cheers, Troy

I like to remove the rosemary before flipping, then use the same sprig on the other side, once the steak is done I use a little of the rosemary, some garlic, a bit of butter and salt in a mortar and pestle. I use that bit of paste on the cutting board and slice the steak on top once it's rested. The juices from the steak combine with that paste I made to make a super powerful and flavorful taste.

I've been doing the cast iron/rosemary/butter baste thing for about a year now(stovetop). I prefer it over grilled any day. I also do a rosemary rubbed chucky in the Dutch oven over the fire while camping. Best braised beef ever. My wife's rosemary plant is turning into a stick.

Is it a good idea to make a rosemary infused butter to cook with the ribeye or is rosemary too pungent on the palate to try that? Could goat cheese be a nice complimentary flavor to add at the end of the cook? I really enjoy your videos and content! Thanks so much. Suggestion: I’d love to see a series on developing not only barbecue sauces but different types of salsas with different types of peppers. I like hot stuff being from Texas but some peppers are just so acrid that they overpower the rest of the salsa’s ingredients. Cooking them also change the taste as it does with onions. Continued success!

ATB, I had a question. I use red oak charcoal to cook my tri tip (Santa Maria style) in my standard Weber grill. Using the new "Smoke" from Thermoworks, I was able to watch and the unit recorded the carryover. I was amazed to see the tri tip carryover 18 degrees. I Pulled it at 125 and rose to 143. Too far done for us and that was the thicket part of the tri tip. Is it typical for a bigger cut of meat (compared to a ribeye) to carry over more? Thanks and keep up the great videos!

Larger cuts will carry over more than a smaller cut due to the thermal inertia, especially if you don't reverse sear the large cut where it has time to slow before the sear. We pull our steak when it's either right at or just 1 or 2 degrees away from our target. Thanks for watching!

what is your favorite way to sear a steak? A cast iron skillet? Caveman? With grillgrates? If so with grillgrates upside down or right side up? 2 charcoal baskets filled with a full chimney over regular grates? I really like the cast iron sear, but I find that over 2 baskets of charcoal, I burn up all the seasoning on my lodge skillet. Any solution to that? Thanks man, I really love your channel. It's the best blend of gourmet cooking with barbecue on KZfaq.

We have sold both brands for years and only recently (this past week) stopped selling Big Green Egg. The main reason is lack of innovation and cost to the consumer. Kamado Joe simply builds a better product that costs less. We have been so impressed by KJ as a company that we are focusing on that brand from here on out. Our shipment of the new KJ Classic II's should be here this week and we'll start putting it through the ringer as soon as it arrives. Thanks for watching our videos!

It was about an inch thick. Just a warning that this method works best for thinner steak up to one inch, any thicker and the outside will burn before you get the internal anywhere near done. Thanks for watching!

We use both all the time, we just did this recipe on our podcast and used clarified butter with it.

Cool....I clarify 3 or 4lbs of butter at a time and use it for weeks for most proteins at least, especially beef. Taste better and better for you.....high smoke point oils generally turn to free radicals under high heat.

I have a big joe and if I use it 6 days out of the week I go through a 20 lb bag of charcoal. This is using it like a grill and not like a smoker.

Truly, if we only had one it would be the Yoder Smokers YS640. Luckily we don't have to choose, but the smoked food on the Yoder is just better (cleaner smoke output). Thanks for watching!

emmm that sounds good two venison loin wrapped in beacon... we get just thick cut pork chops with the bone and split them and stuff them with apple stuffing very good flavor i cut up pieces of beacon once and mixed them in the stuffing with dome diced ham... then one day after cooking a loin and doing the same thing only wrapping it with beacon i tried it with the chops... very good ,,, there good without the wrapped beacon too,,,looking forward to your next creation..

No, and that actually isn't true. We're getting ready to do some steak myth busting videos, but in the end, rest the steak for 120 seconds or so and you're good to go.

The seasoning comes off in the flavor, you can either look up what flavor profile the rub has, and make your own or buy whats similiar, or purchase off the internet. In general those smaller seasoning makers are gonna produce a better product, so you could make your own, but all your doing is slightly tailoring it more to your own personal flavor preference, not neccesarily making a better rub

There is a lot that goes into developing a rub, and it's far from just throwing some store bought single spices into a bowl from a recipe you find on the internet. If we felt we were smarter than Malcom Reed, Todd Johns, Andy Groneman, Brian Misko, etc. we would roll our own of everything, but we're not.

A pan sear is much different than a sear direct on the fire. I could be wrong but the name for this style of sear is a Pittsburgh Style. Great cook!

Except you can just cook it on a stove top and not have to spend 20 min setting up a grill, since all you are using the grill for is a heat source. Also, I wouldn't use a POS Lodge, I have my Griswold, thanks

leet_thrust That's a great point. The issue is All Things BBQ is a business and their business is smokers, tool for smokers, grills, sauces and seasonings, etc. They don't sell ovens, so their videos are made accordingly. Also, there is an element of smoke flavor on the meat even though the rib eyes are on for a short period of time. They rep their products they sell and cook using them. Try this on your choice of cast iron and enjoy my friend.

Sure you could cook it inside... if your cooktop can get this hot (and is gas and not induction or electric) and you want to deal with the splatter and grease. As far as you having a problem with Lodge, that's fine by us. Thanks for watching.

Seems like a huge waste of time and money (ie charcoal cost) to use a grill the same way you could your indoor range or outdoor gas grill/burner. Maybe if you shut the cover in between bastings to give it a smoky wood fired like cook and flavor. But it doesn't seem like that's happening here. Just saying.
