To make Pandan Extract:
Blend 10 pre-cut Pandan Leaves (you can find the Pandan Leaves at the asian market in the frozen section) with 1/2 cup of water in a blender. Pour the mixture into a container and let it sit 2-3 hours until it has separated and a murky green layer has formed in the bottom. Pour off the top clear layer and the bottom dark green layer is your Pandan Extract.
Ingredients:
1 egg
1 cup all-purpose flour
1 tbsp of cornstarch
1 cup of coconut milk
1/4 cup of melted butter
4 tablespoons of white sugar
2 teaspoons of baking powder
a pinch of salt
1 teaspoon of pandan extract (or 1 tsp of vanilla extract)
a few drops of green food coloring
Directions:
Pandan extract comes from the green pandan leaf that's used in a lot in asian cooking. When it's cut open, it has a strong aroma of vanilla and almonds. You can find pandan extract at your local asian market. Or if you want to make your own, check out the info box below.
In a blender, add your egg and blend it until it's nice and frothy, about 30 seconds. This will help make the batter light and airy. Next add the coconut milk, melted butter, sugar, flour, cornstarch, baking powder, salt, pandan extract, food coloring, and blend it just until everything comes together.
Pour the batter onto a hot waffle iron, as much as you need to cover the grill plates. You can tell it's done when it stops steaming, or if your waffle iron light says it's ready.
My favorite way to eat these Pandan Waffles is to dip it in a little bit of coconut milk and then wash it down with some vietnamese iced coffee. It's the perfect snack to enjoy any time of day! Xoxo

Hello, your videos are amazing! Ive been subscribed you from about half-years ago, and its my first time comment on your video hehe. By the way, im from Indonesia, we used to have coconut-pandan-palm sugar in our traditional food.. for example, we have a Putu Ayu cake, which is a pandan sponge cake steamed with coconurt flakes on top.. or, the Kelepon, its not typically cake because it made from glutinious rice flour, and then you mix it with a little bit of water and pandan extract until it forms to a dough, then you make an individual ball then you stuffed it with a little bit of palm sugar inside.. then you boil it, until it cooks all the way trough so that you end up with meltes palm sugar.. then you coat the Kelepon with coconut flakes.. So Yummy!! We eat a lot of traditional dessert that using palm sugar and coconut milk sauce.. like Serabi, Kolak Pisang etc. So you probably want to enjoy the Waffle with the palm sugar and coconut milk sauce, if you interested hehe So far i really love all of your videos, a huge support from Indonesia ! ^_^

Can you substitute the coconut milk for almond milk? I know the taste won't be the same but would the texture change?

Usually coconut milk is thicker than almond milk, I'm not sure how that'll affect the texture, but since you're adding flower and cornstarch I think you'll be fine.

jello168 i use coconut milk from a can! i think the coconut milk from the carton is a little too watery and doesn't have as much flavor, but you can certainly use as well. the coconut flavor just won't be as intense. enjoy!

In chinatown located in NYC there is this small viet cafe place and they sell "green tea waffle". Everybody goes crazy for it, but to me I taste no green tea flavoring instead I taste the pandan flavor. I have a feeling they renamed it to "green tea waffles" to sell more.

I think the way you get them to be chewy is by adding a little batter to cover the bottom and then cook it a little then you add more batter after you cook for like 30 secs- 1 min. I have never tried it at home but thats how I saw a store make them that way.

you need more tapioca Starch. Tapioca Starch makes your waffles more chewy, rice flour give it that crispy exterior

You can minus the food coloring because pandan extract is already green and will turn the batter green anyways. ^^

yes you can - just add in maybe 1/2 a cup extra of coconut milk to thin it out a little more. enjoy!

I just made these and they taste really bland. I also used the 1 TBSP of pandan extract with the food coloring. It looks like I'm gearing up for St. Patrick's Day. :(

These are definitely not Pandan Waffles...they have the flavor but that doesn't mean this is the way to make them. These taste like pancake mix with pandan flavor. Extremely think, not crispy on the outside nor soft and chewy on the inside. However, I did enjoy this as it was easy, but wouldn't make them again as I wasn't looking for pancakes.
