This Sam Ross Milk&Honey original is crisp, light, refreshing, and amazing.

The Paper Plane was invented by Sam Ross at the legendary speakeasy Milk & Honey. Milk & Honey is sadly no longer around, but Sam’s new bar (opened in the exact same spot as Milk & Honey) Attaboy just won Best American Bar of the Year at Tales of the Cocktail, so that’s a big deal and awesome. Milk & Honey will always hold a special place in my heart because my wife I and managed to get in there for the first time on the night we got engaged. We were in the area, we’d never been, I’d heard of the place but figured there was basically no chance we’d be able to get in… knocked on the door and a few minutes later we were have the best drinks of our lives and I was set off on a path of well… this. Sam made me a Left Hand Cocktail that night and trying to get my hands on the ingredients to recreate it in New Jersey was a months long saga. This isn’t about that though, this is about the Paper Plane.
This drink is of course named for the M.I.A. song that was absolutely inescapable that summer when the drink was crafted. It’s a variation on a Last Word but it’s a big step away from the originator as it replaces everything but the lemon juice. Most of the Last Word variations only swap one or two ingredients, seldom do you find the Chartreuse taken out. Anyway, this is the Paper Plane:
Paper Plane
1 oz. or 30 ml. Lemon Juice
1 oz. or 30 ml. Aperol
1 oz. or 30 ml. Amaro Nonino
1 oz. or 30 ml. Bourbon

Please do a milk punch episode. I know it's so 2016 but I really love that drink. I used to work at faith & flower in LA which was known for it and actually at one point got the recipe from the man who made it there but have since lost it. I used to go into the walkin to see and smell cambros filled with pineapple, spices and spirits. It was so awesome. I only remember that it had pineapples, smith & cross, cognac and some kind of indonesian rum that I can't remember. And I can't remember the process. Huge fan, would consider it a huge solid to help me out. Thanks.

Exactly. I do the master shot, and then we re-make the drink in closeup, but when we shoot the closeup I've gotta do crazy hand contortions to catch the light and get things in focus, so... I spill, a lot.

Based on your tasting notes sounds like an ideal aperitif/pre-dinner drink! I know the nonino is required but I'm definitely inspired to see if I can make a variation with Averna (maybe as more of a digestif drink)! This channel is always a highlight of my fridays so keep it up!

Equally excellent with Meletti Amaro (budget buy) and if you make it with Montenegro, use a nutmeggy Rye... it has more of a baking spice vibe, and I call that one a Paper Sleigh (since it feels more like a holiday riff on the classic.) Great as always!

as not a big whiskey/bourbon drinker (which is something I've been trying to fix) I was surprised by just how much I enjoyed buffalo trace. I found it very drinkable with an enjoyable heat to it and it was just a very pleasant drink which I was not expecting to be honest and it wasn't too expensive so all in all in my opinion a great drink and it occupies a permanent spot on my drink shelf.

I love this drink! I had one on my birthday when I found out the restaurant we were at had Nonino. In spite of what you've said, I'm still sure I'd like it better with Montenegro amaro instead. Because I have that in the bar at home.

@How To Drink So I've got a doosey for you. My boss claims to have invented the Atomic Rainbow. He and a buddy are said to have invented it a flair competition in Vegas. He is a good Bartender, and his flair skills are bananas. I'm trying to get his recipe if you'd think it over. Love the show btw.

I describe this drink to people as being vibrant and bracingly tart in the best possible way and they all agree that it's apt after having one. The fresh squeezed lemon juice adds such great lift and freshness to the other flavors along with that lovely lemon aroma, it really ties the cocktail together and makes the Amaro Nonino and Aperol just sing. It's just a fantastic cocktail with balance and palette tension in spades. I like Old Grandad bonded, Four Roses small batch, or Buffalo Trace in mine but Early Times or Evan Williams Bonded both work really well too!
