I tell ya Paula. I've been a single dad of four for 18 years, I found myself with two young ones and new born twins. I didn't know how to cook. You helped me to learn good recipes my kids would eat and they could get In there and help. This Corona virus is terrible but i tell ya, me being home with my kids all day every day is a blessing. I've worked so hard i feel this is the first time I've been able to just be home and cook and take care of my kids. Today was split pea with left over Easter ham and we are making this to go with it. Thank you for everything, especially your great attitude that somehow puts me at ease. God Bless.

mookie eastman My Mom had a sweetheart named “Mookie” before she met my Dad. He never got over her, and still writes her to this day. Enjoy cooking with those young’uns!

That casserole is infinitely variable. If you want a full meal, add ham chunks. If you want a "Mexican" dish, add a can of green chilis and use Pepper Jack cheese. Want to make a spring version-add green onions and green peas. It just makes so many meals special.

Paula, thank you. This was my Mom's Thanksgiving dish. She'd bring it to dinner and stand proudly by while people were wowed. She passed in March after a long illness. She and I used to watch your show together. This will be our first Thanksgiving without my Mom. I'm making your cherished recipe in her honor. I appreciate you so much. Hopefully you have a lovely Thanksgiving.

Jiffy corn muffin mix is the best!!! It’s made in Chelsea, MI where I was born😀 The original Jiffy mix was invented 91 years ago when Mable Holmes wanted a biscuit mix that was “so easy a man could do it” 🤣 She invented it for a friend of her sons who was being raised by a single father and the boys lunch had a buisuit so hard she referred to it as a “white hockey puck”. The idea was to invent an inexpensive mix so that even a single father could make a great biscuit.

I used this recipe in my speech class in college. I’ve also added salt, pepper, garlic and diced (small) onion to take a little of the sweetness out.

Paula my beloved mother and I use to watch your cooking shows and I just want to thank you. You brought my mother great joy before she died . She kept many handwritten recipes from your episodes along with our family tradition recipes and as I look through them I always think of the joy they brought her. Thank you for these videos in this strange time we find ourselves in. It’s important to be able to laugh right now and to continue some sort of normalcy in this crazy world we are now in. I have missed you on the cooking channels and wish they would bring you back. I thank you for your sense of humor and being from the south I appreciate your southern hospitality. Thank you so much and keep the videos coming. I can’t wait to try these recipes I think you should make these into a new book. Thanks and stay safe!

I add an egg and mix up a cup of shredded cheese right in to the casserole then bake. I like 1/2 sharp cheddar and 1/2 shredded Velveeta. Yummy!

I like to mix it up with a bit of diced onion, ricotta, parmesan (real not powdered) and a bit of cream cheese

Wait- I followed directions to a tee!!! And it was runny. Is that how it’s supposed to be? The taste was great nonetheless. We all liked it but expected something more cornbread like. It was moist and kind of oily

@@crawleyr4919 you may have missed a cup of flour, or Jiffy Mix, or added a bit too much oil and cheese; it should have the consistency of ultra moist cornbread with little embedded chunks of delicious corn kernels, and the cheddar cheese melted and blended to lift the savory flavor of corn. Some clever folks substitute greens, green peas, or other veggies, but corn is the best and sweetest.

When I was a kid they were 29 cents a box. The cake mixes, frosting and muffins also. We were poor so we bought them a lot. Late 1980's through 1995 ish

It was 88 cents a box at my local grocery store, but later the same day I was in an Aldis and saw them for 47 cents a box. Such a steal and so delicious!

Wow! This recipe really brought back great memories of my early days in the kitchen! I was in college. The year was 2003. And every day after class I’d get home to catch Paulas cooking show. And this was the first recipe I ever tried. I didn’t really do grocery shopping, didn’t cook much, but I surely enjoy watching you cook! I made this and was so proud! It was loved by all at dinner! The other recipe I made next was your Georgia Cracker Salad! That salad bagged me a wonderful man! Married 13 years now! He always talks about the cracker salad that sealed our reltionship😂

I think Teresa is her assistant and Eddie is her video man I would think she needs them they are a help to her. She's not on TV with a big production crew but she's doing this out of her home so I would think she would need the help! Personally I am just glad to see her again!

I’m sure she will never see this but during chemo her videos helped me get through the rough days. I would just binge watch them over and over. It just reminded me of home and gave me such comfort.

My wife is a nurse battling daily here in Georgia, in her COVID environment, and to come home and have her work from home husband who is now a Cooking King because of you just makes her day! 4 years ago i asked my new son in law if he had any childhood dishes he would like me to make for Thanksgiving. He asked for corn casserole. I googled the recipe and went with the Paula Deen version. Well...that recipe has now zoomed to the top of our family favorites and landed right under my dressing! I have to make two recipes, it goes so fast. I had always wondered why Jiffy cornbread had such big displays during the holidays! Now i know its because of your corn casserole.

oh man my mama made the best dressing growing up. She made the real deal too using the turkey drippings in the dressing. She chopped up the onions and celery and boiled the eggs to go in it too. The only thing she didnt make herself was the seasoned bread crumbs. She would always make up several pans of it then freeze them. We'd enjoy them throughout the year. They were never the same after they were frozen though. I mean they tasted good but not as good as when they were freshly made.

I make this corn casserole for get-togethers and ALWAYS come home with an empty casserole dish! I get asked for this dish whenever there is an up-coming gathering. It is delicious and so easy to make. I love this recipe.

I have made a similar version for Thanksgiving for years and called it corn corn bread. I use coconut milk for dairy issues. Always a hit.

@@lisasmith9311 1 can whole kernel corn (drained), 1 can cream-style corn (not drained), 1 box of Jiffy corn muffin mix (8 ounces), 1 cup sour cream, and 1 stick of butter (melted). Once it's baked, top with 1 and a half to two cups of shredded cheddar cheese. Put it back in the oven long enough to melt the cheese.

This is exactly the same corn pudding recipe my family has made for years... its an absolute must at all family dinners. The only thing we dont use is cheese. As much as i love cheese i dont think i want it on this dish.. but thats the beauty of cooking.. you can do what you want!

I put 2 eggs in mine. To make it a corn pudding, you add 1/2 cup of sugar and a teaspoon of vanilla. Don't use the cheese, of course. Makes a yummy dessert.

When I had a houseful to cook for,I made this often. Our family loves cornbread. Once in awhile I would change it up for southwest themed dinner. I would use mexican corn (cans of corn with onion green and red bell peppers). If I didn't have that I could chop up the veggies fresh and cook and cool them before adding to main dough. I have added jalapenos or green chilis. No matter how its made I love it!

Paula-- Made it Thursday night, and put in the fridge. Took it out on Friday for a dinner, reheated it and topped with cheese. DARN GIRL! is was insanely delicious!

Hi Miss Paula! I'm 63 and I've watched you from the beginning and nobody comes close.As far as I'm concerned there is NO substitute you are the Bell of the kitchen. This is the best ever go to dish. I have made it several times for pitch ins and family gatherings. It cones out perfect every time! I got it from Jamie and Bobby’s cookbook when I first made it! I am a papercrafter and besides working from home, I have been making cards for first responders and healthcare workers. Hope you and Michael are well!!

I was assigned this recipe as “The Corn Casserole” for family thanksgiving when I was 25.....I’m now 50 and STILL bringing this dish to EVERY thanksgiving no matter who in the family hosts. If I even thought of not bringing, I’m sure my kin would vote me off the Island. It is truly that great! Love you Paula!!!!

Corn casserole came out great! A day later I tried it as a dessert, warmed up a square, then added fresh blueberries and a dollop of cool whip!!! Very good!❤️👍🏻

I was wondering if this corn casserole is the same as corn pudding. I made corn pudding years ago from a friends mothers recipe but for the life of me I cannot remember how I made it. This seems close but I’m not sure. Do you know if it’s the same?

Hi Paula, I am really enjoying this series. We have had a crazy year, our home was destroyed in a tornado that hit us in February of 2020 (we were IN the house), and we have been living in an emergency rental home on a 20 acre farm since being displaced. Now that I'm a farm woman (born and raised in NYC...lol) I thought I should learn some good old southern cooking. Following the tornado this COVID situation occurred, and I saw your Quarantine Cooking series. We are in Spartanburg SC, but we do have a son that lives not to far from your restaurant in Savannah. Have never been to your restaurant, but next time we visit our son, we will have to check it out. I made your chicken and dumplings, and they were a BIG hit, as was your peach cobbler. YUM! Now we will have to try this one too! We are hoping our home will be fully repaired by the end of the month, and although we'll miss this beautiful farm, there is no place like home. Thanks so much for posting these video's, and having such a happy attitude. I think you bring joy to many people! Gail Gann Seals

I made that recipe for my family and my husband did not care for the sweetness of it. So I changed it up. And y'all have got to try this. It is absolutely delicious. I followed the recipe minus the sour cream (I simply forgot to add it). And then added one package of Martha White Mexican Cornbread mix in with the Jiffy Cornbread mix plus one extra egg and 1and 1/3 stick of butter. I also added a good amount of course chopped Mezetta Tamed Jalapenos. That gave it a different flavor and it turned out wonderful! I absolutely love both recipes. The first one was definitely like a desert. And the changes I made in the second one made it more like a dense rich cornbread. I'll have to remember to add the sour cream to my version the next time I make it. I'm definitely going to use both recipes as a great side dish to any meal. Thank you Paula for bringing this to us. Have always made it savory, not sweet. In addition to the corn put in the casserole, I also line the bottom with cream style corn before adding my casserole. Been in the family over a hundred years and my granny would always shutter when someone made it sweet. The savory is the best. The sweet is just a dessert. The savory is a bonafide casserole.

I just made this and it's got to be my favorite new casserole! My 94 year old grandmother always likes creamed corn and cornbread since she was a young child, she cant get enough of it either. Tomorrow I will likely make this and add maplewood bacon and canned green chilis

And now yet it’s late I can’t wait for morning cus this mommas heading to my local grocery store. To get the ingredients from ur corn bread. And try. To make ur chicken fried I know a lot about cooking but never the quick. And go simple but yet it’s still a good meal. And no one will never know any different. I love you humor ur inspiration. And u inspire me to cook more. And. I hope u will continue to do more meals even after quarantine is over. So. Ty ty ty. And I know my family will ty just as much. Cus I’m hearing it all the time now momma where did u learn how to cook this good but I come off from ur humor. I’m enjoying this quarantine with my lovely husband, my fur babies. Me and my husband usually just drive when we are bored, or watch tv and lay down. When he is at work, and when I babysit I do laundry and then at home I do the house chores.

Made this for the first time last year. It is the best corn casserole. I have another called San Miguel corn pudding that I have made for years. It's a great recipe but involved. This is so easy and absolutely delicious. Making it again this Thanksgiving.

I have a granddaughter now is 14. I have bought several of your cookbooks over the years because of her. she watched you on tv and she fell in LOVE with Paula Dean. that was all she talked about. that was maybe 5 or 6 years ago now. To this day she is still in love with you and your cooking. she came over weeks back probably two months now. She said Nana guess who I found on KZfaq I said let me guess. She said, Paula Dean. she was so excited she said we have to subscribe to her page. I said Ok She loves to cook and she is always making your recipes. I have always loved to cook and have had a passion for many years. I have had surgery on my hand a few months ago and have not really been able to type much until now I want to thank you for what you do and the great impression you have put in my granddaughter's life. Not too many good people have videos on here for her age. Nana Loves your cooking too

I lived just outside of Savannah for 2 years. My husband and I made a point to go to Lady and Sons the night before we moved. We decided that restaurant because I have been a fan for years and wanted to try multiple different foods. We went with the buffet and were not disappointed. Paula, thank you so much for the quarantine cooking. I was elated to find this and I just love your spunky, fiesty attitude. I would enjoy sitting and talking with you while having iced tea. I love you Miss Paula...i just come on here to get comfort by seeing your face and listening to you talk. You are like a warm hug from the baby Jesus Himself. I tell you I've been so anxious lately, just so unsettled I've got my oldest daughter who was drunk and screaming at everyone she screamed at us for an hour straight and in my face you need to come here every day to take care of your effing ( she said F word) mother. Well my mother does not have one bit of difficulty and my oldest daughter moved in with my poor mother and with my grandson 6 yrs old and with her boyfriend...she's been living on and off with my mother and her men for 16 years and my poor mom ...she doesn't pay her way neither does that boyfriend of hers. Im not kidding you and 2 kids later a 16 yr old that hasn't lived with her and she went on to have another baby ...i love my grandson ...so she had just screamed in his face to scream at his dad but my grandson was laying down in front of him they were watching a movie..and here she goes off and is swearing and at the top of her lungs i said enough we don't deserve this stop it she stood at the garage and had a bong in her hand and saying foul things i said stop stop screaming shut up and she wouldn't and again started in that my mother my effing mother and i said I'm gunna shut your mouth for you if you don't stop and she said a bunch more and i pushed her to go out the door and she grabbed my hair out and was hitting me double fisted...her boyfriend came and grabbed her she had my hair in her hands and when he pulled us apart she wouldn't let go of my hair....my diabetic daughter i just picked up from 3 weeks in dka in icu came in to get her sister to stop my oldest began to kick her in the kidneys over and over again. I tried to say you are kicking your sister but she wouldnt stop so i just stood up and let her keep my hair i ripped it out by not continuing to allow her to kick at my poor younger daughter and by then her boyfriend was screaming that's your mom that's your mother..he said i am so sorry. I said its okay..better me than this house. Better me than you guys. I hadnt even come over for a visit my mother had come over and kidnapped me to come to her house for a minute. I still dont know why we were there...lol but this is heavy on my heart i breast fed that evil snake for 3 yrs and ill tell u what my mother made her rotten. She is rotten to the core. I cant imagine ever hurting my family let alone punching my mother in the face.

Mama was from Pike Kentucky. That was one of her favorite meals. Still 2 this day Cornbread has 2 be in cast iron. Martha White's self rising cormeal has best recipe 4 it on pkg. I prefer mine coarse so I don't add an egg 🇺🇸

Been keepin busy with learning to can, and teaching myself how to sew face masks for people. I donate them to a group where i live, and they disperse them to those who want/need them... my family came to Oregon from Arkansas in 1949. Although both my grandmother and mother are both gone, i still make the southern dishes they made. And i LOVE to listen to you talk while you cook...i miss their accents SO MUCH!!! My mother told me once when i came home after a month if visiting family, that my accent was so thick you couldn't have cut thru it with a hot knife! Lol I LOVED HEARING THAT!!! Thank you for your southern cooking, and your comforting, sweet southern accent...
