Joan just saw this!!! I kept saying, "add a couple more eggs." Then you did. When you poured it into the skillet, I said "you got it!!" You should not have the juice running away from the fritter much. I could tell by the way they were acting when you moved them that it was perfect. It is such a simple recipe, but oh, so good. Mother had a grease container just like yours. She was born in 1906 and grew up eating these--I think her sandwiches were taken to school. Daddy came to WVU to teach chemistry in 1926 and mother, a chemistry major, was his lab assistant. Mother's first cookbook was 1926 from "Iowa State College". When I am looking for one of her recipes (Tomato Aspic or Perfection Salad or Spoon Corn Bread) I always look in that little book to see if the pages are stained and then I know I am at the right place. I went to graduate school at UNC, Chapel Hill for 2 degrees and love southern vegetables and BBQ. I now make the bone in shoulder pulled pork on my large Oklahoma Joe's Highlander smoker/BBQ. Your Okra & Tomatoes recipe is the best!! My okra is late this year. Thank you so much for making mother's corn fritters. It was a real thrill for me to follow you though the recipe. If anyone tries slitting the rows and then scraping, please put the bowl in the sink and prepare to an additional clean-up. It does splatter. I even set my bowl in the sink.

GoodMorning!! Silver Queen was my grams favorite. It’s all my grandparents grew and we would scrape every bit of goodness off every cob and enjoy all winter long🌽🌽🌽. Have a blessed day all♥️

My grandma Faye had about half acre lot behind her house in a small town in Ohio. She grew corn, tomatoes, potatoes, cucumbers, beets, lettuce, onions, cabbage, and all sorts of beans. She also had some rhubarb, strawberries, apple tree, watermelon, and had a grape arbor. I remember all of this because we would have to go over there after school and on Saturdays to work in her garden and tend her yard and flower beds, too. Everything that was consumed in that house came out of her garden with the exception of meat and dairy. I remember so many of her excellent recipes to this day. When she passed, the cousins went to her house to clear it out, and we found a whole case of her bread and butter pickles in the crawl space in the basement. Needless to say, there was a lot of arguing before we managed to get them divided up to make everyone happy! LOL. She made the best corn relish, (and corn fritters!) watermelon rind pickles, pickled cabbage, and canned just about every vegetable that grew in her garden, too. With the exception of potatoes.... With a big family, we gobbled those up. I remember peeling big piles of potatoes for family dinners. She baked her own bread too, and the morning that my youngest sister was born, (June 1966) we were in the kitchen eating thick slices of homemade bread with strawberry preserves. Sorry this post is so long, but I got so caught up reading/hearing the stories about this lady's mother, that it made me reminisce. God bless! 😊

I own where I grew up on 5 acres of an old farm. Once more I have a garden where daddy taught me to garden thanks to electric deer fencing. We never grew potatoes due to the heavy clay soils. I don't try corn because I can get good corn from people who bring pick-up trucks from Preston County next door. Except for potatoes, your list looks like our list from my childhood. This spring was another odd one with hot and dry followed by periods of cold and very wet. I had to plant beans and okra twice and the beans are spotty at best. Mother (and I now) make bread and butter pickles from the old Ball Canning Book recipe. I also make the brine for pickled beets and then add eggs.

@@joangibson859 It makes me happy to hear that there are still gardens like my grandmas'! She had a huge eating area off the kitchen, the table could seat 14, and was covered with old-style adhesive greasepaper. (There was a formal dining room, too) That's where we prepped food items for cooking or canning. It was a large cool room, even on a hot day. The actual cooking area was to the side....not a large room at all. She had a huge farmhouse sink in which I washed a lot of dishes! LOL. Even that brings fond memories! Where do you live? Oh that looks so good !! All my life I've heard all of my grand parents and my parents say silver queen corn is the best. I love creamed corn with thickening in it. I know I would love these too. Miss Paula, I still have a container just like that. It come from my grandmother and I save my bacon grease in it too.

question: Miss Paula, that looked like something I had as a kid that my mom (very old school home country farm cook) used to make and it seemed like she called them corn pones? Now for anyone that can answer. My mom used to make something that was called (sound it out it's probably not spelled correctly) ponny ponny cookers, ponty cookers??. Has anyone heard of this? Fyi, when I say old school cook we used to churn our cows milk separated cream into butter by shaking it in a big mason jar.. I miss those days. Thanks Miss Paula. The corn fritters from back in my youth were a little thicker like a chunk and fried in deeper grease/oil. We sprinkled them with powdered sugar to serve. So good! A fond memory.

You could probably add some cornstarch to thicken it :) my mother always did that when something was too thin. These looks delicious and I wanna try some now, great suggestion Joan!!!

Paula, use a Bundt pan. Force the cob down the center hole from the top side of the pan. The kernels will come off into the Bundt pan and then you can milk the cob if you want. It makes it so easy.

You adjust the egg based on how juicy the corn is. If the first test one has the juice really running from the pile in the skillet, add an egg. When Paula added the extra eggs and I saw the consistency, I knew she had it nailed. When she put it in the skillet, it was perfect. After a few batches, you will just know when you see the consistency in the bowl. When the corn is older and less juicy, 1 egg/cup of creamed corn is just right.

My Grandmother made fried cornbread every day for lunch (which she called dinner). I’ve never been able to find any cornbread as good as hers, but will give this recipe a try. Thanks Paula!

That looks yummy! Since it’s so thin I think I would have to add some self rising flour to the mixture.

Adding flour will make it a different flavor and texture all together. The juice should not run far from what you put in the skillet. If it does, add another egg. Paula did it correctly--I kept saying put more eggs in and she added 2 I believe. When she poured it into the skillet, it was perfect. Early in the season, corn has a lot more juice in it. Later it is much less juicy and it also helps to have older corn for that reason.

The old wooden gadget I have has saw-blade like teeth, then a space for the corn to drop into the bowl, followed by a straight blade which scrapes the cob. It works well and quickly. Then I just go over the cob w/ the back of a knife. Paula had a modern version of what I use, but don't think I'll trade.

Mother was actually born on her grandfather Brohard's farm at Tyrconnell which no longer exists. Her family home (Reynolds) was behind 4-Corners. Her cousins were Barbara and Elizabeth Cather. She left Grafton in 1924 to enter WVU and her parents moved to Morgantown the next year.

@@joangibson859 Where the 4-Corners restaurant is? I kind of remember that place. I remember the Grafton City Hospital and the old Dairy Queen where Mom and Dad used to take us. We lived in the Country on the old Valley Falls Road. I went to the Prunty Town Grade School up on the hill. TFS It brought back old memories.

You might not read this cause I'm sooo late to coment. But I had to try. My son gave me this tip... When putting up Bacon Grease, he puts a Coffee Filter in the strainer. It pretty much gets rid of that brownish bacon particles that will end up in your dripping container. Most people don't care, but others do. Keep up the videos Old & New. Can't wait till you get Your Kitchen back !! :~)

Oh Paula, Silver Queen is the best! I have some growing in my yard right now. Last year I had 40 stalks with 2 or more ears on each stalk. It was delicious. This year I only planted 10 because they take so much water here in the desert Southwest in Albuquerque, NM. I was giving corn to everyone last year. LOL! I live alone and certainly couldn't use all that corn. I bet those fritters are yummy! Thanks for this Paula. I hope your day is a wonderful one. ❤️

@@wendelynyoung8609 I always start them from seed the first day of June. I just get the seeds at WalMart or Lowe's. That corn is so easy to grow. I just stick them in the ground, water them lightly daily and in a week they're coming up. Silver Queen is the best, so sweet and tender. My grandkids love to just pick them and eat them raw, they're so good that way. I LOVE calabasitas. My mom always made them and now I make them too. I grow my own zucchini and use that, it comes out so delicious. Still hoping for rain but it's not looking like it. You have a good evening too. The sunset has been gorgeous tonight. Take care :)

Jason, I have my mother's little clay crock sitting on the back of my stove with render bacon grease. The clay crock is over 80 years old. I never followed political cooking. Always butter, bacon grease or chicken fat.

That is the reason for the older corn. Then the one egg/cup of fresh creamed corn works.

If I don't have access to fresh corn, could I whiz some store-bought frozen corn kernels (thawed of course) in the food processor, and maybe add a little corn meal to thicken? (cornmeal is just ground up dehydrated corn, yes?) Thank you, Joan for the recipe, and thank you, Paula for sharing it!

I don't think that would work. I know you cannot use canned cream corn (someone I know tried it). I have actually had fritters several times this year from grocery store corn. With the new super-sweets, you can get pretty good corn in the stores. I always make certain that the ears look fresh green and plump.

You want it thick enough that the juice does not run far from the pile in the skillet.

How about using the corn fritter instead of bread( in place of) for those sandwiches? Definitely gonna try this, nice to have Teresa behind camera, hope Eddie doing o.k.

In Ohio, we call them Corn Oysters..it's an old Shaker Recipe from Ohio. Although we put in 1/2 cup flour..seperate two eggs. Put egg yolks in the recipe..whip up egg whites and then fold in..fry and voila, corn oysters.

It’s the only corn I will eat right off the cob! I don’t really appreciate cream corn it’s just I don’t know too much shit for me. But I love silver queen right off the cob! Of course with butter and salt and pepper

I grew up in Iowa and Silver Queen is so good ... I never had this type of corn fritter and look forward to trying it out. My mon put creamed corn on fried potatoes bet she would have got a kick out of this one. We lay her to rest on Tuesday ... this video brought such wonderful memories to me... you are amazing Paula she loved you... she called you the second queen of her kitchen. Lol

My grandmother, mother and I always have bacon grease on the stove top. It is used up within a week and then wash the metal container and refill weekly.

@@charitys.3862 No, it's good for far longer than a week. Old school was to keep it on the back burner of the stove, but nowadays you can keep it on the countertop, away from heat and it will last a good long time. Eventually, if you don't use it often, it will go rancid and you will know that by the smell. So if you don't use it too often, it will last a very long time under refrigeration.

Alas, no. A friend of mine tried it and it did not work. However, some of the grocery store fresh corn ears will work. I have made a couple of batches already this season. Looks for ears where the husk is green and not dried looking and the ears are plump.

No, I didn't care for this recipe at all! There are so many better ones out there. I like to make them with a little Bisquick, so there is flour and baking powder, but just has a little more substance to them. Also, some diced chives, or green onion, and parsley in the mix, and top with sour cream. 😋

Cringed from beginning to end!! Was way too thin plus she kept messing with them in the skillet way too much to correct her mistake. Plus silver queen should be eaten on the cob not pulverized into a milk, nor allowed to get old and tougher. There are other varieties that would work just as well. Field corn worked just fine for my grandmother in rural NC

There is a bad glare on your camera lens. to make them thicker, we strained out some of the liquid.

After she added the extra eggs (and she had quite a large batch) the consistency was perfect. You don't want the juice to run too far from the pile of batter and it did not.

You can use anything in cast iron, that's the beauty of it! I don't cook acidic food, like tomatoes, in mine but everything else goes in it. Metal, silicone, bamboo utensils all work great in it - just NO soap, EVER!
