Pork Mazamorra, prepared with flour, Chancaca (Panela/Rapadura ) and milk, with notes of cinnamon and clove. This is one version of Pork Mazamorra, also referred to nowadays as Chancaca Mazamorra. Before, it was prepared with pork lard and cornflour or wheat flour. This sweet Peruvian dish is unbeatable.
INGREDIENTS:
1.5 Liters of water
450 grams of Chancaca (Panela)
Cinnamon (1 sprig)
8 cloves
One teaspoon of anis
1 ½ a cup of flour (corn) Optional
7 deciliters of cold water
320 milliliters of Evaporated milk
A few drops of vanilla extract
Powdered cinnamon
Tips:
It can be prepared with cornflour
It can be eaten hot or cold
Raisins can be added at the end of preparation, (to taste)
