The alcohol and water separate like water and oil. Oil is more dense with water, and alcohol is less dense than water. Either way, the water or oil try to separate themselves from the water because of the difference in viscosity... cool

Surface tension is stronger than gravity when the tears are small. Surface tension pulls the molecules up and this makes them bigger. As the tears get bigger, gravity gets stronger and eventually pulls the tears back into the wine.

When I first read that, I knew that it FELT right, somehow, but it wasn't until I read "A Rose for Ecclesiastes" by Roger Zelazny that I came to a practical understanding of that concept. I'm quite sure that you're familiar with the story. But you might not be familiar with this one. I'm not totally convinced that that's why the droplets bounce. If it were because of the flow of the liquid under it, I think you'd see a the droplets slow down and then stop when the flow was large enough to overcome the weight of the droplet, and then the droplet would start growing and eventually just drop down to the liquid in the glass. What I think is more plausible is that the droplets reach the liquid boundary (due to their weight) and are able to dump a tiny bit of water into the liquid. This makes the tip of the droplet a tiny bit less heavy, so the top of the droplet is then able to pull it back up momentarily (because of surface tension). Of course, there's still more fluid coming down, so the droplet starts growing again, becomes heavier, and the cycle starts again.

I knew someone would explain this. I've observed it for a long time and thought this would be perfect for Dianna or Steve Mould. I haven't watched the video yet and my guess is it's the low surface tension of ethanol creeping up the side and evaporating. OK, I watched it up to 1:40. It looks like the ethanol and other components of the liquid are draw up by the low surface tension of ethanol, then the ethanol evaporates away leaving a heavier, non-alcoholic liquid to fall back down as legs. OK, finished it. I was on the right track I think. Just learned that things flow from low to high surface tension and the maragonisomethingsomething effect. Thank you, Dianna. Great video.

I just happened to have just finished watching the whole Back to the Future trilogy! I'm going to check out Jake's videos - I think I have seen a couple already but not all of them. Thanks! Concerning the last bit of the video around 9:00: if the droplets bounce because at the meniscus the flow is so strong, then where does all that fluid go suddenly? Does it evaporate at that spot? Does the film increase in thickness, like a shockwave? Does the fluid form a tiny cylindrical vortex? ...?

Back in the days it probably told how good the quality was, since then some producers of wine didnt care for the production of it. And those who did managed to get a higher percentage of alcohol in it.

I just recently started to watch your channel and you've covered some great topics, making it easy for a lay person like myself to understand the complexity of physics. I also enjoy that fact that you engage women within the field to explain what specifically they're researching. I'm not sure what the ratio is between men and women are in physics, etc, but it's great to see so many people so stoked about what they're doing!

Grapes are not quite trees, but the vines do convert CO2 into oxygen. Maybe we can have at least one of the 20 million trees be a grape vine, and make some wine with it. :)

i'm more a fan of alchemistry girl "Rather than see the present world as exclusively a veil of tears and a black prison - none of these metaphors are mutually exclusive - the great strength of alchemical thinking and the way in which it is completely antithetical to science and in fact why science has so much contempt for it, it’s because the alchemist had the wisdom to see that everything occurs in the presence of it’s opposite. My God, the hubris of Rene Descartes to divide the world into the primary and secondary qualities, and what are the primary qualities? They are motion, mass, spin and momentum. What are the secondary qualities? They are color, feeling, taste and tactility. This tells you that you’re nothing. You never touch reality; you live in that world of sense. I studied the tears of strong wine in correlation with a capillary experiment, about 25 years ago. The marangoni effect is a type of capillary reaction. We found that the glass and how it was created plays a part in how tears are formed.

I learned welding during my undergraduate and passed this convection part just by mugging. It's now, nearly a year later I finally understood the change in composition in weld pool and Heat affected zone (HAZ) as they call it. Thanks :)

I think that the falling droplets bounces off when they meet the wine because of law of conservation of energy which is when droplets just combines with the wine the surface area of the droplet reduces hence there is a reduce of potential energy of the droplet hence increase in kinetic energy of the droplet which cause bounce at the rim of wine.

One of the really cool things about surface tension gradients is that the liquid will normally not be static (unless it's under very particular conditions). In other words, as long as there is a surface tension gradient, the liquid will be forced to flow! This can be shown mathematically by examining the directions of the stresses at the liquid interface. Though it's not related to surface tension gradients, another interesting capillary flow phenomenon is the formation of coffee rings. All the sediment collects in a narrow annulus, because the fluid at the boundary of the puddle has more surface area, thus evaporating faster. The fluid from the inner region flows out to the perimeter to replenish the lost fluid, as the outer edge is basically pinned down due to adhesion and the puddle won't shrink. So this drives the sediment to form a ring.

I have noticed this phenomenon some time ago, as well as that it's stronger in beverages with higher alcohol content (comparing wine with porto for example), but never knew why it happens. Thank you for the explanation.

Thats really interesting. When testing wine and talking about qualities of the wine, one usually doesn't just wait for the "legs" to form by Marangoni effect. Usually, one swirls the wine, causing the residual wine to drip down the sides, in "legs". We've always thought that the longer those legs run down the glass, the higher the residual sugar content in the wine, since dissolved sugars increase the viscosity of the wine. One can see this in the difference between ports (high sugar) and zinfandel (lower sugar). While the alcohol contents are slightly different (port is ~19%, zinfandels ~16-17%), the residual sugar contents are WAY different: an old vine zin has 3-5g of sugar per liter, most ports run around 100-150 g per liter. Consequently, the legs last way longer in a port than a dry wine. The difference between different wines can often show up as well in legs that are more or less persistent. Incidentally, this formation of legs doesn't say anything about THE quality of the wine, rather about A quality, namely, the residual sugars. This can tell enthusiasts whether the grapes were likely harvested late or early, what type of grapes might be in a blend, etc. But given this interesting work here, I guess it also tells us about the potential alcohol content. One might guess that the sugar content will also have an effect on the surface tension gradients formed to make the Marangoni effect.

The Same thing happens when the water tension is stronger than the weight of gold dust . In simple terms it will also break when you add a drop of liquid soap to break the surface tension but instead of the gold dust running off to the sides it will drop straight down .
