I have a really hard time finding okra! So, I ordered a box, and spent a day and a half canning and freezing it! This pickled okra also has cherry tomatoes.

I love tomatoes and okra, as a side dish. My grandmother always canned them. I do to. I pickle okra but I haven’t tried the picked okra and cherry tomatoes, but now I will. Thanks.

We like pickled okra (and all kinds of okra any way!!) but have never canned it with cherry tomatoes. Thanks for the new idea. ♥️ It also looks so pretty. Yes, okra definitely needs hot days and warm nights since its “roots” (🤓🤓) are in Africa. I think my favorite way to preserve okra is to dehyrate it for my winter soups, stews and gumbo. Yummy. I'm not a fan of okra either but I'd give this a go because it's a pickle. 🙂Maybe next season because I've gotten down to my last few jars.

I’ve got to try this! Being in the south I’ve only had okra batter fried! I think I would like it like this too!

You've been truly Blessed with an abundance of okra! I'm so glad you were able to buy a whole box, & just looking at it makes me so hungry. Pickled okra is my very favorite & have complete Faith that I'll soon be canning again. I got two half gallon Ball jars, brand new! Yay! It's a great start. I used to buy pickled okra from my local farmers market and they were soooooo good! Hopefully i can try making them myself. I've never done canning before, so I'm a little nervous.

It's only natural to be a little nervous when something is new to you. Please, trust me when I say, you're going to do just fine! Always follow the USDA guidelines, & never take shortcuts with anything. The Ball Blue Book on canning is good to read before you get started, to familiarize yourself with terms, & the things you're going to need. Look for jars & accessories now, everywhere you can & always buy jars, lids & rings whenever you see them. There's quite a shortage & you want to be ready when an abundance of produce comes your way. Yes, as Jeanne said, it’s ok to be nervous, but I try to have everything laid out and prepared ahead of time. I always read through the recipe before I start, even if I have done it a lot of times. Then read each step as you go. You can do it! Also, as she said, if you see jars, lids or rings, buy them! They probably won’t be there the next time you look. Good luck!

Looks SOOO good!!!!! I love your packed counter space lol. I really do LOVE pickled okra or fried okra and in soups it's good but a lot of people have textural issues. Honestly a good pickled okra kind of eliminates that fear! If you like other pickled things please try it. I grew up loving fried okra. Then had it in gumbo and liked it very well but it did have a slimy texture around the seeds. As i got older i got to try them on a salad bar and boy were my eyes opened. Everything people told me about pickled okra was false. They're delicious. With salad or chicken salad or potato salad or any salad you can think up!!!

Can you use Himalayan sea salt?

You could use it, but it might cause a cloudiness due to minerals.

Vickie, would muscadine leaves work in place of grape? That’s all I have and I want the crunch!

They are part of the grape family, and can be used the same as other grape leaves, so I would absolutely try them!

Don’t discard them! Salt is only for flavor, not safety. Just season when you use them, 🤗
