Pipa duck is easy and delicious to prepare at home !
Pipa duck is one of Hong Kong's traditional grill ducks. The preparation is very similar to Peking duck.
Pipa duck is characterized by a thin, crispy skin and tender meat. In contrast to Peking duck, the meat of the pipa duck is not loosened, but served on the bone. Since the spices mainly stick to the inner chest, it tastes particularly aromatic. As a dip, I recommend the plum sause or hoisin sauce. You will definitely like it!
Ingredients & Spices:
- 1 duck (about 2000 g)
- 15 g ginger
- 25 g shallot
- 3 cloves of garlic
- 2 tsp salt
- 1/2 tsp five-spice powder
- 1/2 tsp cumin ground
- 1/2 tsp coriander ground
- 1/4 tsp nutmeg ground
- 1/2 tsp pepper
- 1 tsp chicken powder
- 2 red fermented soy cheeses
- 2 tbsp hoisin sauce
- 2 tbsp rose schnapps (Mei Kuei Lu Chiew)
Vinegar mixture:
- 200 ml water
- 100 ml vinegar
- 1 tbsp rose schnapps (Mei Kuei Lu Chiew)
- 1 tsp of maltose
- A little red food coloring (you can leave it out)
