Ingredients:
5 cups of duck stock
⅚ cup of duck blood
2 tbsps of flour
2 pears
3 tbsps of vinegar (if it's not already in the duck blood)
2-3 tbsps of sugar
cooked noodles to serve

My Polish grandpa would make this soup when he could get fresh duck blood from someone in his town who went duck hunting. I was young and couldn't tolerate the smell of it, much less eat it. Thank you for educating us on how it's made.

my grandmother told me about how her mother (from poland) would make this fresh, draining the blood from the ducks. i think the blood and traditional foods she ate as a kid, even though she was poor, helped her live a long life.

Found recipes from my Great Grandmother. She was Polish, and was born in the 1880s. Her recipe appears to be identical to the one you are making. I don't know if I'll ever make it, but it is good to see what it could look like! Thank you for making this.

It looks like what my grandmother would make except she always made it with plums instead of pears and always had potato on the side

Czernina była kiedyś bardzo popularna w Wielkopolsce, bo tu jedzono powszechnie kaczki (moja prawie cała rodzina jest z Poznania). Moja śp. babcia miała kaczki i gotowała czerninę ze świeżej krwi, ale to było dawno dawno temu, jak jeszcze byłem dzieckiem i jak żył dziadek (zmarł gdy miałem 9 lat, potem babcia już tego nie gotowała). Do tego sama robiła makaron.

My great grandmother used to make this. I remember eating it when I was very young. She would make kluski with it. Not sure I would be able to find the blood anywhere.

You can buy powdered animal blood online, not sure about specifically duck blood though. You might be able to find a poultry-keeping forum online and see if there's someone in your area who you can buy a duck from. They would probably butcher it for you as well

This is the way I was taught to make it! We put prunes and white raisins in it! And made potato kluski dumpings to put in it! Some people put beets in it! Instead! I would love to buy a fresh duck and it's blood to make it! But I don't know where I could get it now in the Chicago area! I would love to make it again! We also used vinegar in the blood. Brings back old memories! I am now 81 years old and I know how to cook many things from before! I was always interested in cooking from very young! Would love to be able to make it again! If you make the potato kluski ,and you have leftovers, you can fry them with butter and a little bit of bread crumbs.

I love this soup, haven't had it since my good friends mom passed away. My mom always used prunes but my dad's mom always used raisins. Guess it was whatever they grew up with. Neither right or wrong.

I would LOVE to try this soup, it sounds so savory and full of protein. Vietnam’s version Tiet Can Viet is raw so that’s not a good idea.

My son is in Gdansk right now, and he tried this soup. He said it actually tasted good, but mentally he couldn't get past the idea that it was blood. So it was difficult for him to eat it.

Looks great! Just wondering, if the soup cools down, will the blood coagulate?

no because it was mixed before with the flour

Besides, the blood (immediately after taking it from the duck) is seasoned with a little bit of vinegar and water, which prevents it from coagulating.

So, let's say I go hunting and have fresh duck blood. Would I have to salt and vinegar it or just add vinegar to it and no salt?

vinegar will work just fine, no need to add salt as well

Zamiast krwi daję konecentrat pomidorowy i octu jedynie do zbalansowania smaku i mam zupę mniej krwawą ale przypominającą smakiem czerninę, suszone owoce i przyprawy robią robotę
