Potato fufu from raw potatoes with a stand mixer? Yes, you heard me right! In my quest for a seamless way of making fufu without the use of mortar/pestle, I got the inspiration to experiment with my stand mixer to see what the result would be. Need I say that I am overwhelmed with the outcome and I feel so fulfilled that I followed my instinct to bring to you this recipe. Yeah, and this is my little journey of using a stand mixer to pound fufu.
Hanging on to my inspirations, I was inspired to experiment with using raw potatoes to create potato fufu. I was a bit sceptical to try this out but on second thought, I felt that there isn't anything to lose if it doesn't turn out well. I'm super excited that I followed my instinct because the outcome was just phenomenal. So, for our Naija diasporan families that can't thrive without pounded yam fufu, here is a rescue. There is no doubt that purchasing yam for pounded yam in the western world is extremely expensive, hence this new unique method of making potato fufu from raw potatoes courtesy of @GLOBAL FOOD BOOK is a no-brainer. The result is almost similar to a yam, so it is a WIN-WIN thing.
