You need to blanch the fries before you put them in the freezer. 2 minutes in boiling water with vinegar and salt. Then throw in ice cold water and then drain them and put on a towel. When they are dry enough add a few drops of oil with the help of a brush or using your hands. Place in ziplock bags or better yet using sous-vide.
