Hi Joe, nice series of videos! let me ask you, do you have any recipe for making an aeropress and get close to the chemex and kalita world? I only have an aeropress at home for the moment and there’s something darker and stronger in my results that I’d like to avoid. Thought maybe you a take on that.

Thanks to you, I got it correct at first time. I just adjusted the grind size on my Rancilio Rocky to get better taste.. Third time, I had the perfect brew... 3:10 minutes, Ethiopia Yirgacheffe, stove top roasted on an iron pan, light roast.. 20 years drinking coffee, now I am in a different phase..

Good video! Question for Joe: I usually avoid pouring on the very edges because it washes the grounds down and leaves the filter exposed, which creates a path of lesser resistance and therefore more water goes through that part of bare filter instead of through the coffee on the bottom. I saw this somewhere online and tried it and it actually improved my cup. What so you think?

Hi Joe, I have the 10 cup Chemex. What sort of brewing times would I be looking at if I wanted to brew 10 cups (say for a party)? Also, would I have to adjust the grind size at all?

You are probably looking at a time of 3 to 3-1/2 mins and you should not have to adjust your grind size. Experiment a little bit and see what tastes best to you! Thanks for watching!

Hey Joe, thanks for the tutorial. From what i learned through youtube is the ratio is 15g of water to 1g of coffee, which is very close to your ratio. What is very different is extraction time, you aim for 3:30 while i learned it was 4:30. I brew my chemex accordingly but i have two issus, 1- the muffin reaction while blooming is not happening. 2- whats the deal with the extraction time, i got sour coffee after 5:00 not slightly before or at 4:30. Thanks again

+lesslighter Thanks for the input, i still struggle to be consistent although my ratios are the same. today i brewed my chemex with 3:30 minutes and got a very strong coffee, stronger than the 4:30 timing and yes i used the same ratio. As for temperature, i found that if i preheat my kettle before pouring the water in it and got really acidic coffee.

He has the same setup as I do. A bonavita scale and variable temperature gooseneck kettle. While I believe that there are better options on the market now, both have served me well for the past 5 years without a hitch. And best of all they can be found at reasonable prices as well

Great Chemex how to video! But I still can't get it quite right. I am using 525 grams of coffee with a 1:16 ratio and a medium grind (20 of 40 on a Baratza grinder). The water seems to be flowing through in 2 1/2 minutes or less and I end up with watery coffee. I am hesitant to make my grind finer based on the advice I have seen. I do the bloom as demonstrated. I suspect it may be my pouring technique. Don't know how to slow the process down. Would be interested in any advice you could offer. Thanks

Ultimately your grind should be tweaked based on flavor. You coffee is watery so you need a finer grind. If your water took a while to flow through and your cup was bitter obviously you're grinding too fine. Hope this helps, one year later :)

Should you swish some hot water inot your serving cup before pouring your coffee into it. In order to keep the temp of the coffee higher? Thanks

+1timby Yes. Same as preheating the vessel or the portafilter when making espresso. You don't want any part of the coffee chain to pull heat from the water during the process.

I just wanted to post here a thank you note for Joe! Sort of because of you, recently when I was choosing my pour over method device of choice, I chose the Chemex. And only after a few trials, I was replicating the same kind of results as you (with the Virtuoso, Chemex 6-cup, Harios Drip Scale and Bonavita Kettle). All I have to do is tweak it for my own taste. I hope you could have had finished your espresso series, but good luck Joe in the future. I think your videos were one of the best coffee related videos I watched in 2015.

what do you do to keep the coffee warm once it is brewed? I am the only coffee drinker in the house and I don't like to rush it. Will it take on different flavors as it cools? Is it good to save for cold coffee later? Should I microwave it? Thanks. Love the videos.

Hi Mark! Thanks for all of the questions. There are differing opinions on many of the questions you asked, so the best way to answer them is to experiment yourself! Coffee definitely does take on different flavors as it cools, with some of the best flavors coming out soon after the cup is freshly brewed. A mantra to live by for coffee enthusiasts - "Let it cool." A refrigerated cup of pour over coffee can definitely be used as great iced coffee, but will not be as smooth as cold brewed coffee. The latter brews over a longer period of time, exhibiting the delicate nuances of your coffee without any bitterness from the shock of going hot to cold. As for microwaving your coffee, it really is a matter of preference whether or not you feel it affects the flavor. Maybe brew a cup at a time, or experiment to see if your coffee tastes compromised by reheating. Let us know if you have anymore questions!

Want to keep your drink hot so you can take your time with it. I guess people still do it but I remember seeing insulated water bottles being used. They often look steel.

I have settled on using an awesome Thermos Stainless King travel mug that really keeps your shit hot for hours. After I pour my first cup, I put the rest in there. It's still steaming an hour later, or hours more if I fill it to the top. I actually like the flavor better after its sat in the Thermos for maybe 15 or 20 minutes. It gets a little richer somehow. I do not, however, like it once it has cooled completely as iced coffee. It just tastes gross and flat. Reheating by any method doesn't revitalize the flavor, and I especially dislike the way microwaving it changes the feel of the coffee in my mouth. So I'm not a fan of drinking old coffee. I just dump it. I'd actually much rather drink coffee that's sat on on a warmer plate for hours. Gives you that nice diner-esque nuance.

Hey Joe. I noticed you often use a 6 cup Chemex to brew a single cup of coffee. In your opinion is the 6 cup still good for brewing smaller amounts? Or will you get better results with this size if you're using it for larger amounts? I'm looking at getting one, but I usually only brew one cup at a time, and I've heard the 3 cup chemex isn't as good

The cone size of the 6 cup Is at a better angle then the 3 cup. You shouldn't notice any draw backs by using the 6 cup for smaller amounts.

I wish you would do a series on expresso! Example, answer this question: why may you have to adjust grind size to get same pressure when you switch to a different bean? Just experienced this.....different bean origin....same grind setting....same tamp pressure...but expresso machine had such a high pressure I had to start over. There are lots of other variables I think you could explain in term I understand.

In my experience, it boils down to differences in density. Different beans have different densities (usually, coffees grown in higher altitudes are denser) and even the same coffee roasted to different roast degrees have different densities (darker roasts are less dense).

You should remove the paper filter to dump the water with the paper dust. If not, you just attached the paper dust to the paper filter again.

I use 30g of coffee with 730g of water at about 200deg. I get two travel mugs from this, and my friends think this is strong stuff. Yours must have dual use: drink and wall paper stripper?

I am trying to learn how to use v60 the correct way as I pour water should be flowing in a straight line in the middle but sometimes it is pouring from other area of the filter what I am doing wrong

I'm glad I came across this video. Recently, I dropped my coffee carafe after a move. I began just putting my cup in and letting the coffee drip directly into it. Then, that inexplicably broke, so I have no coffee on the weekends. :( So I've been searching for a new coffee maker and came across all of these wonderful ways to make coffee. I think I will try the pour over method.

Seriously, Chemex is the superior choice. You're in a good spot to be able to choose a new brewer, so just go for the best. I'm pretty down-to-earth about all this and just like a good solid cup of American-ass coffee...I'm not some picky snobby single-source-aficionado-y guy. But I am curious and experimental, and in all my experimenting with methods, I'm sure that nothing beats a Chemex with Chemex paper filters. Boy howdy, what a clean, sweet cup! DO IT, DO THE CHEMEX

This sounds amazing and I really want to try this myself at home. I went to a local coffee roaster yesterday to try a pour over and I was told to drink it black. I did not like it at all :/ . My drink of choice when I go to Starbucks is a white mocha so, I like my milk and my sugar. I think this method would end up being much better than what I fet at Starbucks typically so I dunno

I'd like to know if brewing a full 8 cup Chemex is still supposed to take the same amount of time as when I brew a half pot?? I've watched and read a lot and nobody seems to answer that, it always seems to take double the amount of time.

At the price of a new Chemex, I wish they were less breakable. I usually break one a year. A pottery Chemex would be good. less breakable, and retain heat.

Joe: i just heard about the possibility of throat cancer if we continually drink fluid over 145 degrees. He suggested waiting another couple of minutes after brewing. what have you heard? i follow your recipe and method for my morning pour overs.

As you know, no brewing method is perfect. Using a paper filter results in the coffee not having it's full expression as most of its oils are trapped in the paper filter, but the coffee in the cup is clear without fine grinds. The French Press allows for the oils to go into into coffee brew, but you might get some small coffee grinds when poured into a cup. But one can use a small wire mesh strainer (like used in whole tea brewing) to catch any potential grinds. In both instances, either drink all of the coffee, or place the rest in a some sort of a coffee thermos. I use the French Press only, and the Italian moka pot for traditional espresso.

Anyways you measure grams to ounces or millimeter to ounces 400 g or 400 m = 14 fl ounces +/- a few decimal points. Besides, grams is weight not volume! Volume is millimeters! You cannot consistently convert grams to fluid ounces because one is weight and the other is volume. Also, water and coffee, for example weigh differently due to the particulates in each liquid.

I really hate to burst your bubble and possibly dent your self esteem in your coffee snobbery but this isn't rocket science and in a blind taste test I doubt you could tell if none of your process's was even followed.
