I've been learning pour over, specifically so that I can make a single cup while working, which has me out in the woods with no electricity. Mostly watching this to choose a good reusable brewer. I've been just putting a store bought filter into a funnel, but I've had a lot of failures, due to having to hold the funnel, or build a stand for the funnel, which doesn't work on rocky ground.

I've had clear cups out of the V60, is the Chemex really preferred? It's difficult to master. How does the Bonavita compare with the switch in pour over mode?

Thanks for this video. The pour over method is healthier than the French Press in the amount of oils extracted. I have the Melitta, and I will definitely start using it again I realized what I was doing wrong with it before.

kudos for mentioning the woodneck! Spot on with describing the cup you get from one. I've honestly had my absolute best cups from that one... but not always repeatable. I usually use it in the afternoons when i'm already caffeinated since cleanup takes longer then brewing!

Great video! Small question. Between the chemex and the Hario you mention different filter thicknesses. Couldn't you just choose whatever filter and at that point just be choosing between more or less flow restriction or is there a pairing of the filter thickness that goes with each pour over?

The Chemex and the V60 have different filters that vary in sizes. If you try to fit a 6 Cup Chemex's (there's the smaller 3 cup version) filter into a Hario V60, it probably won't fit. The 3 cup Chemex series has a smaller filter that probably kind of fits inside a V60 brewer, but I'd imagine that brewing coffee in a V60 using a Chemex filter would be kind of difficult.

Thank you for explaining the flow rate side of things. I was considering the v60 as my first but I think the kalita might work better for me, since I don't care THAT much about coffee (yet, at least lol) and I'm more likely to fuck it up, so the kalita might be the best for me (for now, at least) thank you!

Love to watch this sort of video, fascinating, informative. I love learning about coffee. However, just not sure pour over is for me. My perfect cup of coffee is a Turkish cup. I like my coffee to have a mouth feel like hot chocolate.

Hi there, I would like to get a stainless steel paperless pour over filter, for example the "Bartelli" found on Amazon. I would like to hear you opinion on that versus the paper filter option as I like the idea of not using paper filters everyday. Another thing I am interested in is if it is possible to get crema on top of the coffee using a paperless pour over method? Thanks in advance

The metal filters deliver a great cup, but there are more oils than a paper filtered cup. Think french press flavor. As far as crema goes, you won't be able to get that using a pour over method. Check out this video about crema to see why not: kzfaq.info/get/bejne/m9dzg7JezdmcfJs.html

Thanks for the help! I am not well versed in the descriptive language relative to coffee flavor. However, I do enjoy the flavor of espresso. when you said the metal filter does not filter as much oil out of the cup, how does that affect the flavor? Would paper or metal be more similar to the flavor of espresso? Thanks!

Does flow restricted takes a long long time to flow or is it just me? I swear the coffee just drips 5 drips in 10 seconds.

Why do you say that you need a very careful pour for the Chemex ? I've used it with just normal electric kettle with good result. I mean it's easier to reproduce the exact same cup each time with thin spout pouring kettle but out of these 6 pour over devices Kalita,Hario V60 and Hario Woodneck indeed need a very careful pouring And I also highly recommend the Hario Woodneck for complex coffees such as Cup of Excellence winning coffees as you get very clean cup. Brazilian and some cleaner Indonesian coffees like Sumatra Raja Batak are also very good in the Hario Woodneck.

Yeah! The metal filter will also give you more oils than the other two methods.

I find the woodneck far more forgiving than the v60 - I don't think I've ever made a bad brew on it, while the v60 has given me some frightening results if I'm "off" by any factor. Love 'em both, but I am surprised Joe puts the woodneck in last place for ease of use.

These videos are stressing me out! I'll just make my coffee and drink thanks. That said, I still want to be able to reproduce whatever Second Cup/Starbucks makes in these huge cylinders (what do people call these?). The Aeropress is good, but it's all boldness and no flavor. The siphon pot almost got me there but cloth filters are disgusting. I am waiting for my Hario V60 to ship so we'll see. I blame KZfaq for this endeavor xD

I don't agree with your theory of flow restriction. The bottom hole of a Melitta style filter isn't very important for flow restriction or contact time and extraction at all, but you define the flow speed with grind size. Your grinder gives you all of control abot the flow speed you need, the amount of coffee controls the intensity of the flavor, and temperature is the instrument to find the desired balance between different components of flavor. Give it a try: Grind coffee very coarse as you would do for a french press and take it for pour-over coffee in an old-fashioned Melitta filter. The tiny hole at the bottom will never restrict flow speed enough for a proper extraction. A finer grind size will do.

Always in search of the better cup. After trying every brewing method known to mankind, I found my "roll your eyes in the back of my head" cup at the bottom of a Hario woodneck (quality of bean and roast withstanding). This being personal and subjective of course. You just have to work for it.

Overall, an informative video. Although, I wish the reason why "body" is attributed to the flow restriction and I assume the immersion part of the hybrid. There are some other unclear parts but I don't think it could be covered in this video. I don't know if you can call controlling water flow by hand as "engineering." To me, parts of the video can be explained in a simpler manner, since the science is just mentioned and not explained. Not to say aspects of coffee making do not involve engineering with some chemistry knowledge but I feel that is calculated by the creator of the brewing method product and not necessarily the brewer. The video, while generally understandable, is a strange hybrid of a lot of overly positive and sometimes complicated verbs describing coffee flavor (which comes from a sales/marketing vibe), some knowledge and practical advice.

I think Joe does an incredible job of going through the details. However, in all my research, I feel like his ratio might not represent the SCAA standard, which seems to be closer to 18:1 -- not 16.6:1 -- which you can read about here: www.scaa.org/PDF/SCAA-Certified-Home-Brewer-Booklet.pdf If you do the math of 1000/55 you get 18.1818....

This is our second K-Classic. We had our first one for many years, so when we had to replace it, we wanted nothing else but this exact kzfaq.infoUgkxBrV-RbF5Nk0Rlt9i15aao-YMzqzTG8Vf model. We use it for about three people everyday in the morning. The taste and quick brew is one of the reasons we like it so much. There are so many choices of brands of coffee that we would grab what was on sale and test the different brands from there. I would definitely recommend trying different brands of coffee to find the ones you like the most because there are brands that quite frankly taste horrible.

He’s quite condescending too. I just purchased the Chemex yesterday and as a grown adult that has a brain I believe I can master this pour over coffee maker without having to feel nervous or trepidation. As important as coffee is it’s still just coffee and you can make another pot. Everyone had a timer on their phone and you don’t need a scale if you follow the manufacturers instructions and then add your own flare.
