In today's canning video we're chopping up a whole pile of carrots and then preserving them in mason jars with the pressure canner. As far as pressure-canning goes, it doesn't get much easier than this. We're going to walk through every single step, from peeling the carrots to waiting for those lids to pop!

Carrots Pressure Canning Recipe:
-Chop or dice carrots.
-Place carrots in sterilized quart or pint jars (this is raw pack; for hot pack you need to blanch the chopped carrots first).
-Fill jars with boiling water, leaving 1 inch of headspace.
-Process jars (according to your pressure-canner's instructions) at 10lbs of pressure. Process 25 minutes for pints, 30 minutes for quarts.

I used to hate carrots in the can from the grocery store. However, when I canned my fresh carrots for the first time , I LOVED them. I can’t ever make enough jars anymore I eat the crap out of them.

Adding a 1/2 T of dry onion soup mix to every pint before adding the water really makes them taste yummy when you crack open that jar!

Great video. I always grow a 20 feet long by 3 feet wide raised bed with three rows of carrots in East Central Florida. I get excellent harvests of 12 inch long by 2 inches in diameter of Tendersweet Carrots that I save the seed from a dedicated raised bed. That I grow a dozen of Tendersweet Carrots. Where I live in Florida. Many Biennials will produce seed when I plant the seeds in Mid February and by October the Biennials will flower and produce a lot of seeds. I plant my carrot seeds in mid February. I also have a dedicated raised bed for seed production for Carrots, Beets, Lettuce, Radishes, Onions, Turnips, Parsley, Basil and Dill. After 3 years all my seeds I brought to Florida when I moved there. Became acclimated to the climate. I get bumper crops from all the different vegetables I grow. Anyone can easily grow vegetables. You don't need a lot of space to do so. With the price of fresh produce and all the pesticides sprayed on them. Why would you not grow some fresh vegetables

This was super helpful thanks for the step by step on the process. I am just starting on my canning journey and yesterday I made peach jam that turned out really nice. Tonight was carrots which is how I found this video!

Wow, that's awesome! I'll admit that I cannot for the life me me manage to grow carrots very well. I have a somewhat of a green thumb, but not an orange thumb I guess.

I am from Michigan yet, canning in NM at high altitude. I have a presto- same, without dial. I am starting with carrots. Thank you for such a great video. Today, I am dehydrating onions, being that we may have an onion shortage. If your prepping. Here are the items you will need to can, freeze dry or dehydrate for this winter or find alternatives to; Rice Wheat & Flour Potatoes Sugar Onions Corn Chicken & Turkey Beef Tomatoes There’s no harm in writing down these nine items and picking up an extra item or two the next time you’re at the grocery store, to make sure that you are prepared in case these items become scarce in the near future.

I use the orange plastic citrus fruit peeler that tupperware came out with years ago as a debubbler tool. It works better than the typical canning tool for carrots, celery, beans, etc.

I started doing my potatoes and carrots in cold jars, cold carrots or potatoes, and a cold canner. I bring it up to steady steam of venting> I go slow to let everything slowly get hot inside. Then I can as normal. I find I get a better final product post-canning. I did potatoes today and I am doing carrots tomorrow.

I noticed the rack you used in your pressure canner is the rack that came with my water bath canner. I didn’t realize you could use that one in the pressure canner. I’m looking to stack jars.

Yea, this rack came with my pressure canner but it's pretty much the same thing. My pressure canner also came with a flat metal tray (that looks like a big disc) that is for stacking jars, though I've never used it.

Kept in a cool, dark, dry place, they should be good for a year or more. Some people go way longer, but my rule of thumb is about 1 year.

The water inside the jars? Not really. Even after weeks or months, the water in my carrot jars is still mostly clear.

It can be done with a large pressure-cooker if you don't have a specific pressure-canner. But one way or another, to safely can low-acid foods like carrots, they have to be pressure-canned.

Actually, fun fact- the Amish do not use pressure canners. They water bath EVERYTHING, but they water bath for 3 to 4 hours.

@@greatnorthwoodsgirl3274 I have never understood that. All of the wasted fuel could be saved by just using a pressure canner. I think some people say you have to water can low acid foods up to 6 hours. Which is a huge waste of time and energy.

Some people skip that step, but I tend to go "better safe than sorry" when it comes to canning.

@@PIGROLLER1 It also helps to keep jars from breaking when you put them in the canner. Cold jars hitting boiling water... Also, if the carrots are cold from being refrigerated (like if you do the prep. work the night before and refrigerate them in cold water), having those hot jars is going to help as you pour hot water into them and place them in the canner.

You should let the canner sit after the heat is off until you can comfortably hold your hand flat on the side of the canner. It's an important part of the processing & you won't get all the steam when you take the lid off.
