Thank you. Think I’m going to make chili out of the meat in my freezer. Electric company sent out letters with the bill stating possible power outages in the next couple months. So now the meat I’ve been stocking up might spoil.

Does it matter what's in the chilli such as the meats or the amount of chilli or beans I have a recipe that I absolutely love and I've never canned a protein before I've canned salsa but just wondering if there's any pointers on the ingredients that I should put into my batches also do you have to use a presser cooker or could you use hot water method

Casey Bailor...My recommendation? Use whatever recipe you love... ONLY use a Pressure Canner (not pressure cooker, there is a difference)...to preserve chili. Never water bath can anything with beans or meat and remember to enjoy the process!!!

Thank you for this wonderful video. I was so excited to try canning and I finally got my all American canner. I do have a question I was wondering if you could help me with it. I live at sea level in Halifax Nova Scotia Canada and I’m wondering for the elevation I believe it’s 10 to 11 pounds pressure that I have to use. Should I use the 10 pound weight or the 15 pound weight? Any help you could give me would be greatly appreciated, thank you so much

Please do a search...perhaps on your computer for the elevation in your area, if you are less than 1000 ft above sea level...you're good for the 10/11lbs pressure!!!

Mark Frazier I haven't canned in years, but the way the world is going, I decided to start canning supplies to store in case of problems and with canning, I won't be dependent on electricity to run the freezer. I made some chili and pressure canned 7 quarts. Everything went great, but when I opened the pressure canner to remove the jars, 3 of them had leaked some fluid. I left 1 inch of head space in each jar. The three jars only lost about 1/4 inch of fluid level. ( i don't see that as a problem). I also made the chili a little soupy as I had read it should not be real thick. My question is , all the jars sealed, ( I marked the three that "siphoned" to keep watch that they stay sealed. I was thinking maybe I should keep those three in the refrigerator and use them first ). Since they all are sealed , are they all okay? I thought maybe the fluid may pollute the seal ring and the seal may not hold. Is this true?

Mark Frazier, Good for you to start canning. I'm going to suggest that if you have a good seal (check that by using your fingertips to lift the jar by the lid) then you should be good to go. p.s remove the rings when placing the jars into your pantry for storage. Siphoning, yeah can be an issue. It still happens to me too, usually when I'm in a hurry to remove jars from the canner. I find that if I allow the canner and jars to cool together just a bit, I don't have an issue with siphoning. Another thing you can do if you notice siphoning is to place a dishcloth on top of the jars so that they are not exposed to cooler air so quickly. You can keep an eye on the ones you are not sure of, but if you have a good seal you should be ok. Happy Canning !!!!

This definitely was a great answer I needed. I know to remove the ring to check for a false seal because of any fats coming out of venting. Do you ever have any fats in your pressure canner?

I wash my jars thoroughly and make sure they are clean, but do not sterilize any that will be pressure canned. Thank you for Watching!

How much water do you put into the pressure canner? Also, does the chili have to be heated before eating? Or can you just open a jar and eat it cold right out of the jar?

Matthewrs7, Most canners will tell you how much water to add. My Presto 23 quart canner calls for 3 quarts of water, I also add a splash of vinegar to keep the jars from clouding up. Welllll. in situation where I COULD NOT heat it up, I would eat it cold out of the jar. It is fully cooked...twice actually, the second time in the canner, however as long as I can find a way to heat it, I most certainly would. even a slight warming would make it more appetizing (to me)

Unfortunately I cannot recommend where to purchase a pressure canner. I live in Ontario Canada and could not find a Pressure canner here anywhere although Water bath canners can be found everywhere. My daughters knew I wanted one and ordered it online from the USA for me many years ago.

Thank you for this video. I just happened to stumble upon it. This will come in handy. We were once a large family and chili is made by the multi gallons here. We are now 3 & for the love of god I can not make a small batch of chili. 😂😂😂 1 question....we put beer in the chili. It adds flavor and cuts the acid. Is my chili still okay to can?

I love to cook. Really enjoy your channle. I have a question. I have never canned before, once your canner has reach 11 lbs pressure, how does it maintain that pressure and not go higher?

Ok the optional jiggler (weight ) I use allows me to pull off rings...no rings=5lbs pressure, 1 ring=10 lbs pressure and two rings = 15 lbs pressure.. see: kzfaq.info/get/bejne/p9mkgLdi19XJon0.html

Any chili recipe can be canned, 75 min for pint jars at the correct pressure for your altitude. Make it thinner if using dry beans, it thickens.

Assuming you have tomatoes in the chili... it must be ok to mix tomatoes in with chili, beef soups, stews etc but tomatoes alone must be water bath canned?

brrag...I definitely have tomato in the chili...it is ok to mix tomato in chili, stews etc. and those need to be pressure canned due to the addition of "meat or beans" ...Tomatoes alone can be pressure canned / or waterbath canned...Today the recommendation is to add a bit more acidity (lemon juice) to tomatoes when waterbath canning...My "tomatoes alone" always come out better waterbath canned.

I am new to pressure canning. So far I have only canned sweet corn. I have a fresh slow cooker pot of chilli I want to can & I'm just wondering why you dump a couple tablespoons of vinegar in the pot with the jars before sealing the lid

the vinegar in the canner prevents the minerals in the water from settling on the outside of your jars, so they don't come out of the canner cloudy.

cooked to the point you could eat it before canning however I made sure my beans were still slightly firm as the canning process will continue to cook them. If you are using canned beans...they are already soft so not much you you can do about that...your chili will still can up great!

neither, there was a time that we were asked to boil the lids, but this is no longer necessary (perhaps because the sealing compound is much thinner than in the past.) I just make sure the lids are clean...a quick wash, and I place them in warm water just before I am ready to use them.

Ok, first clarification: although both items use pressure, a Pressure COOKER is not the same as a pressure CANNER. There are two main products on the market (and others as well) the high end product is the All-American Canner.The more economical unit is the Presto Canner, both are highly recommended and both provide replacement parts if required. There are differences, so do your homework.

Heather Whitlock, Great Question! yes I have experienced small amount of content release from jars into the canner on rare occasions. When that occurs I keep an eye on the seal for a few days. I also wash each jar with hot water and soap ( I do this with every jar, regardless ) before they are placed into the pantry and wash out the canner. Other than that the content "release" doesn't seem to have affected anything.

Yup, You can!!! just don't overcook your beans first! leave them a bit firm as the canning process will also cook them!

if it is not preserved...just an open pot of chili, I would say not long, a few hours maybe, and I would heat it up and boil for 10 minutes or so before consuming...foods like this should be preferably not be left out at room temperature, but either placed in the refrigerator or kept hot on the stove.

You describe removing the rings before storing the processed chili. Why do you do that? Is that necessary? Thanks!

Not necessary...but 1) it allows you to properly wash the jar after it has cooled, sometimes food particles that are siphoned out stay under the ring making it difficult to remove after it dries. 2) If you have a false seal, the lid (without the ring holding it down) it will just pop up and you now KNOW that jar has gone bad...toss it OUT...p.s. My mother used to keep the rings on, and I have seen an exploded jar of tomato puree and glass...first hand...yuk!

I canned chili today in my pressure canner. I added a tin of kidney beans. I drained them, but didn't rinse. Did I wreck the chili? Is it still safe to store? I'm concerned it had the thickeners or whatever in it that they caution against putting in your canning. Ugh!

You're fine, I do prefer to rinse, They don't likely add thickeners to kidney beans. it's just the process of canning, and the beans breaking down that creates that thickness.

No, It doesn't matter. You can make whatever chili recipe that you like. I would just make a "young, very slightly thin" chili because it will continue to cook and thicken in the Pressure Canner. It's fine to use Quart Jars, just adjust the cooking time for quarts and the pressure for your altitude.

you can't...both beans and meat are low acid foods that need to be pressure canned to make them safe to eat..

a great alternative is to freeze chili. It freezes beautifully. A great way is to put it in jars and vacuum seal the jar.

If sealed properly...many years, however the nutritional value will decline over time! I try to rotate 18 to 24 months

@@Johannaleighann 3-5 years, easily. I canned some vegetable beef soup 6 years ago and it tastes just as good (if not better) as it did then. If it doesn't look right or smell right, don't eat it. Keep it in a cool, dark place and enjoy anytime you want!

If anyone could give me some advice. Why when pressure canning I get some residue from inside the jars inside my pot? I'm raw packing chicken soup in quart jars with celery, carrots, and onions. Also filling up to the 1" line. I'm guessing water is coming out from the meat and leaking out but not sure. Looking for advice. Thanks

It's not so much a matter of "leaking out" but rather of being "vented out" of the jars. The caning process vents air out of the jars to create the seal. Raw packed food contains more air than hot packed, therefore more air needs to be removed, and sometimes the liquid is also forced out in the process. Sudden temperature changes will also have an effect. This loss of liquid won't hurt anything as long as you have a good seal.

@@HerHomesteadSkills I have pressure canned twice, starting yesterday. I plan on practicing more and more. Yesterday 11/12 sealed and today I believe 15 out of 15. I'd like to find out why my pressure regulator is not jiggling? Thanks if u can answer. Thanks for the video.

@@HGICQueenDiamondAries First congratulations for embarking on your pressure canning journey...ok...the regulator...assuming you purchased the Presto Canner- A) the regulator that comes with it is virtually a one piece regulator Model # 99978 that does not juggle, and you have to constantly monitor the heat under the canner to keep it to the required pressure.. b) If you purchased the "additional" three piece jiggler regulator model # 50332 (this is adjustable and you determine the pressure required by the rings on the unit.) I remove one of the rings to achieve 10ibs pressure and therefore don't have to constantly adjust and monitor the heat under the canner. the jiggling is the unit allowing pressure to escape if it goes over 10/11 lbs pressure with one ring removed.

Can any one tell me how I find out if my chili recipe is safe for pressure canning. It's pretty basic chili: 2 tablespoons olive oil 2 pounds ground beef 2 stalks celery, chopped 1 onion, chopped 1 green bell pepper, chopped 3 (14 ounce) cans stewed tomatoes 1 (10 ounce) can diced tomatoes with green chiles (such as RO*TEL) 1 (14 ounce) can tomato sauce 1 cup water 2 (1.25 ounce) packages chili seasoning (such as McCormick® Mild Chili Seasoning Mix) 1 (14 ounce) can kidney beans, undrained 1 (14 ounce) can pinto beans, undrained salt and ground black pepper to taste 1 tablespoon white vinegar, or more to taste Thanking you in advance!!!

Your recipe is somewhat different than mine and I no longer use canned beans if I am going to can the chili as they are already very soft, and the canning process will make turn them softer still...but this recipe is different again... nchfp.uga.edu/how/can_05/chili_con_carne.html and they all can be canned..following the recommended processing time is important.

on the jar rims to clean grease, in the canner to prevent (cloudy) mineral buildup on the outside of the jars.

What is your water level in your canner

dallas... The water level is dependent on the size of the canner...The recommended amount of water for my presto 23 quart pressure canner is 3 quarts of water.

Perhaps, but I don't really, I do make sure there is "contact" and it's works great for me.
