Don't faint, I haven't commented in years but this is one breaks the record. I love this and it's hard to find someone that makes it just right and this looks right. It's the recipe I've been waiting for, and I still need to get that Fermented red cabbage recipe from you as well. Thank you, thank you, I knew you'd post it eventually!

I use them a lot like green onions but I really like this as a side dish with most everything.

It is a lot like making sauerkraut. we dont measure salt and you need enough so extra is not going to hurt but not enough will rot the batch . as for rice and sugar it feeds the bacteria , my mom fed her sour dough yeast potatoes (boiled ) as well as sugar . so that makes perfect sense !! Actually sauerkraut gets to smelling during the fermenting process ! Sounds good !!

There the easiest thing I grow, do well all year and the end result is delicious, everyone around here loves it.

Rice provide sugar starch for later fermentation needs! Similar to Korean kimchi process!

The rice is a carbohydrate and cooking it makes it break down faster, so it was probably a food source for the lacto bacillus to speed up how fast it ferments. That lady doesn't look like the type to sit around waiting so it kinda makes sense.

Interesting!my mom used to preserve them with salt and it so tasty when we eat them in next year after 3-4 from last winter harvesting

Does Noi add MSG, it is such a small amount I don't think it needs to be there, if I make a recipe for this it will be a lot easier and a lot more accepted if there is no MSG.

Hey Paul. It's a controversial flavor enhancer that has not really been proven to be bad for you. There are people who are sensitive to it. She just opts not to use it.

Ah, kinda like when they beat cabbage to make sauerkraut, ymm seeing the little girls eat them straight from the processing pan, and then later you with your pickled red cabbage and ground beef and veggies? "You can't get the garlic chives with your fingers, get a serving fork or spoon", lol....hmm....never tried garlic chives before but are they less "spicy" than spring onions? Gonna check if I can get some seeds here and if not do you think they sell garlic chives in the States? Anyways, thanks for sharing yet ANOTHER AWESOME Video! You to the little girl: " You talk too much!"

FERMENTED not ferminted...... not haten just saying. Nice vid. I have a lot of these growing north side chicago I took some into pots in my apartment they grow crazy. I like to use the flowers.... great on tartars.
