Product photography using one flash which is an old school type flash bought for just £8.50 on ebay it only has an on or off and High or Low settings. We also use Yongnuo 603 wireless triggers which can be bought for around £30.00.
Using an ornament and a watch we use this flash to show different scenarios, direct flash, with a shoot through umbrella and bounce flash. The only other equipment needed is a lightstand, flash bracket and a shoot through umbrella, for a backdrop we just use a piece of white card and a reflector also white card.

I don't have any experience with HDR for product photography. HDR is to extend the dynamic range and in product photography there is not really any need to do that, the dynamic range is controlled by the lighting.
