I've actually done this! In college (many moons ago) we had an open stairwell that was 3 stories high. One of us would stand at the bottom with a lighter, and another person was at the top with a sieve filled with custard powder. Done properly, we got about 15 metre high flames!

The powder air ratio has to be correct for an explosion and then a continuous reaction could take place. That’s why flour mills were out of town, too big a risk of explosions followed by fires. Millers wore clogs, not hobnails boots and thus a reduced spark risk, but a carapace should you drop a bag of flour on your foot. They wondered if, when the first atomic bomb went off, it would start a chain reaction to use all the oxygen in the atmosphere up, killing the entire planet. The risk was deemed 1:5,000,000 (less than the number of oxygen molecules in 32g of oxygen!) and Thank God, it did not burn our atmosphere up.

I remember seeing that experiment on an episode of Mr. Wizard's World as a kid in the '80s. He used flour though. This why flour mills can explode.

I remember seeing the same thing. My mom worked in a bakery, and she said the owner was always strict about not getting a bunch of flour airborne, especially near the ovens.

Flour will do the same. I am wondering if their reactions were "acting" or genuine. I did this type of experiment in what was called 7th grade science class, when I was 12.

I don't think we generally get gravy as a fine powder in the UK. We get gravy granules.

I understand this is all a bit of fun but why the hell is flying custard flammable when stationary custard isn't?

You are basically just adding more oxygen to it. Almost anything burns at the right conditions. But you'll need to get the right mixture of oxygen and fuel. So while some fuel/material (like custard powder) is not flammable when the concentration of custard is very high compared to the concentration of oxygen, by blowing it into the air you get a lot of oxygen rich air mixed with the powder. And that combusts very easily.
