We're back with another mouthwatering roadside recipe. This time, we're spicing up breakfast (or brunch 😉) with camp chef extraordinaire, Carlin Frimmel.

Simple Brunch Shakshuka 🍅 🍳
Serves 4 👥
Ingredients:
° 1 medium white onion, diced
° 1 red bell pepper, diced
° 2 cloves garlic, minced
° 1 tsp paprika
° 1 tsp cumin
° 1/2 tsp chipotle chilli powder (optional)
° 700ml tomato pasta sauce
° 4-6 eggs
° 1/4 cup crumbled feta
° Handful fresh parsley, chopped
° 1 baguette, sliced
° Olive oil, for cooking
Instructions:
1. Start by sautéing onion, red pepper, and garlic in a large pan with some olive oil on medium heat. Once softened slightly, add the spices and jar of pasta sauce. Stir together well.
2. Once the sauce starts to simmer, make small wells with the back of your spoon to crack the eggs into. Cover with a lid and cook for about 5 minutes until the eggs are ready.
3. Top with crumbled feta and fresh parsley. Enjoy with a fresh baguette to soak up all that delicious sauce!
