Did you know there’s a trick to making congee in just 20 minutes?
Congee, or rice porridge, is a classic Asian comfort food that’s often eaten for breakfast or when under the weather. It’s a very simple dish that traditionally takes at least an hour to prepare, but this hack allows you to make congee in just about 20 minutes.
The secret is freezing uncooked rice overnight, which helps the rice break down much faster during cooking. I’m using jasmine rice, but any white rice will work-each variety will give you a slightly different congee consistency. Wash, rinse, and drain the rice, then place in a zip-top bag and freeze for at least 8 hours.
Add chicken broth (or your broth of your choice) to a soup pot, along with garlic, ginger, and the frozen rice. Bring to a boil, then cover and simmer for about 15 minutes, or until the rice has reached your desired consistency. If too much broth has evaporated, add a splash or two of water to loosen the congee. Season with salt, pepper, and fish sauce and serve with your favorite toppings.
Ingredients
½ cup uncooked jasmine rice
2½ cups chicken broth
Kosher salt, to taste
Freshly ground black pepper, to taste
Fish sauce, to taste
For Serving
Soft-boiled eggs
Sesame oil
Chili oil
Sliced scallions

Thought the same thing. You can just cook it the night before and have it kept warm in the rice cooker at that point. It’s probably even more energy efficient than freezing. Only good thing this has is leaving the rice frozen and make it for breakfast whenever you want

​@@philipp594I get the og commenter probably made a light joke, but it's really not that deep. A lot of people have freezers on most of the time, so energy efficiency is not really a factor here. You can also do several batches at once and take it out whenever. The main thing is active cook time.

You guys may want to check the puertorican recipe for asopao ,it is basicly congee but latin stlyle , it is more flavorfull and can be done with any meat .

I soak the rice over night then i cook my congee in my rice cooker. I also add shaoxing wine a splash of soy and alittle oyster sauce or four or five broken up dried scallops i also like adding wood ear fungus and shitake mushrooms but thats just me

If you want to cook Congee asap, just use oatmeal. It literally cooks under 10 minutes, and the texture is similar to actual congee, also it is much more healthy.

You said less then 20 Mins. Cleaning and Putting the Rice in the Freezer overnight is NOT less then 20 mins. As Soon as you touched the Rice that is when the Timer Starts. So you are talking about at least 8 to 12 hours to Make Congee then.

@@butsagyton5093 Seriously? If you were smart enough, you would recognise that this step is not so important, but helps to safe a couple of minutes. If you can't hold your damn legs together then cook your rice straight away...

Bruh that's like saying that you need to include the time to buy the ingredients into the meal prep time. If you just always have some rice in the freezer, then at any time you can make the meal in 20 mins. Is that so difficult to comprehend for your smooth brain?
