When you don't want to wait for a scrumptious stew chicken do this recipe.
Chicken Fat and animal fats are good for you. They lied to you. They want you to be sick.
Saturated fats like chicken fat and pork fat can provide some benefits, including:
Providing energy: Saturated fats are a rich source of energy and can be useful for athletes or people with high energy requirements.
Supporting hormone production: Saturated fats are essential for the production of sex hormones like testosterone and estrogen.
Supporting brain health: The brain is made up of mostly fat, and some research suggests that saturated fats can support brain health and function.
Supporting bone health: Saturated fats can support the absorption of calcium and other minerals needed for bone health.

RECIPE:
1 whole chicken cut into pieces or your favorite cuts of chicken(wings, thighs etc)
METHOD;
Season chicken with salt and black pepper
Add 1/4 cup of ghee or melt fat from chicken as shown in video(this will take about 10 minutes)
Use a small amount of fat from chicken to stew chicken. Add fat back to the pot
Medium heat: Add 2 tblsps of sugar (brown or White) to pot and let caramelized until you see the color as shown in video. Do not let sugar burn or get too dark or else your meat will be bitter.(This skill takes time to master) You do not necessarily need to caramelize sugar in order to get brown/dark chicken. It's just something Caribbean people do when stewing chicken.
Throw meat in pot. Add your spices, onions, garlic, chopped tomatoes or ketchup, bayleaf etc.
Stir pot to incorporate ingredients.
Add water. Water should not be covering chicken. The chicken will produce some moisture after covering. Uncover pot and stir occasionally. Simmer on medium heat until kitchen is cooked and looking scrumptious.
