Cauliflower balls
Ingredients
for 2 people
Half a cauliflower
A carrot
Half onion
Rosemary
Salt Oil
2 eggs
Breadcrumbs
Cheese 2 tbsp
Select, wash and grate half a cauliflower.
Peel and grate one carrot and half an onion, chopped rosemary or parsley.
Bring to the stove, high heat, add 2 tablespoons of extra virgin olive oil, cook, stirring frequently, for 12 minutes.
Add salt, to taste choose between ginger, chilli pepper, cumin, turmeric, saffron.
Let it cool down, add 2 eggs, 2 tablespoons of Grana cheese.
Mix up.
Thicken using the breadcrumbs, incorporating a little at a time, until you get a fairly dry density that allows you to form meatballs.
Pour plenty of bread into a pan and with your hands or with a portioner create meatballs with a diameter of 2-3 centimeters.
Roll the meatballs in the bread and round well.
Fry in abundant oil at 170°c
Serve them with a sauce of your choice but they are also very good smooth.
If you want to use all the cauliflower for 4 people, double all the doses.
