Sweet potatoes are really good in vegetable stew. I cut them to resemble carrots so my kids won’t know....works every time. If your making soup or stew anytime soon you can throw those leftover pieces in the pot. I have also boiled, mashed and Mede sweet potato bred using the same measurement of mashed sweet potatoes in place of the pumpkin in a pumpkin bread recipe. Same with sweet potato pies.

Linda Liddell...I have to learn to use sweet potato more often in my diet. Mark mixed it with the canned rutabaga that I did not like and it did improve the flavor, so i'm not going to throw out the canned rutabaga just yet. Thank you for your post!

My first attempt came out so mushy! I want to try to raw pack without all the sugar. Thank you so much for your video. I am doing this today.

Joyce Chapman...raw pack may make your produce float more because of the air in the fleshy produce, but they cook less using the raw pack method. Hopefully it will turn out better for you this time.

Trying this Raw Pack method today. Ty for your video. Being in Canada sweet potatoes may not be so easy to get when this supply disruption hits.

I prefer a baked sweet potato over a regular potato any day, keep us posted on what you think of the canned version. Purchased some Japanese sweet potatoes the other day and they are wonderful!! Creamy sweet texture a lot better than our local sweet potatoes. It’s to bad they don’t carry them on a regular basis. I canned 2 different jams and beans this weekend, a lot of fun......and a lot of work!

Savannah V...Yup, sweet potatoes have more flavor than regular...LOL...Canning is work, but it can save you work later on, and at least you know exactly what the ingredients are..good to see you are becoming more comfortable with the process.

LadyTaz...I know that some people would object to canning small test amounts, considering it wasteful, however if you aren't sure if you are going to like the end result it is likely a LOT less wasteful than throwing out a canner full of food that you aren't going to eat. I would try a small batch to see if YOU like the end result, it seems to me that canning sweet potatoes is fairly common and should be fine.

Lynda Buchholz...Interesting, I have heard of making them in a syrup but pineapple might be an interesting alternative.

@@HerHomesteadSkills After I said that I thought of orange juice too. I want to stay away from granulated type sugar. So that is a way to sweeten them without sugar.

@Lynda Buchholz they both sound good, let us know how they turn out...if you like the results...That is usually more than half the battle...If you don't like the results it stays on the shelf or worse.

Thank you for this video. I've canned sweet potatoes several times, always hot packing them. And I've been a bit disappointed; they seem too mushy & not as flavorful as I'd like. This year I'll try this raw pack method, maybe a very light syrup in a couple jars just to see if I can make some improvements on past experiences! 😉 Thanks again & God bless!

I have blanched and frozen them too..some veges just don't can well...I will never can rutabaga again!!!!

I thought it was only me. I am happy I am not alone. I don't think I will never can sweet potatoes again. I tried two different batches, two different days, two different purchases, and they were disgusting (for me). I see all these videos with these beautiful canned sweet potatoes, and I say to myself, it cannot be that this only happens to me. I threw both batches in the garbage, could not swallow it. Shame, I was so hoping to have some sweet potatoes canned as I love sweet potatoes. I was thinking of trying one more time (don't know if I will) without all the water, maybe just an inch of water in the jar. Will see, maybe I will when the disappointment dissipates.😁 I don't know if it has to be 75 min for pint and 90 min for quarts. Maybe they are in for too long. Don't know. Have to keep on researching.

Deborah Tofflemire...no Canadian "Pressure Canners" that I am aware of...The two most popular canner brands on the market (replacement parts easily available) are the Presto Canner, you can see my video here..... kzfaq.info/get/bejne/p9mkgLdi19XJon0.html and the All-American (if you have the budget for it, I don't)

I’m curious how these sweet potatoes turned out. Have you opened up a jar yet? I’ve always Cook them for three minutes first I have never raw packed.

kim wiscaver...ok, what hot packing (cooking for 3 minutes) does, it to remove air pockets from the food and allow you to put more food in the jars...It prevents the floaters from happening...The only thing I would definitely hot pack is PEACHES they are notorious "floaters" and because a 3/4 full jar looks unsightly.

I canned sweet potatoes this year for the first time. We used one jar and it seemed to take the flavor out of them. I think I may try using a sweet syrup the next time, or blanch and freeze them.

P S...Ok, hopefully less mushy, so what blanching or hot pack does to foods that will be canned is to remove air from the product...It also cooks them a bit more, and it stops foods from floating...there are foods that I DO prefer to blanch ie: Peaches, and even cook down ie: mushrooms.

Hey Toni, I’ve always baked my sweet potatos in the skin and frozen them. That’s worked for me fo 2 decades but I’m im trying to get get more in jars and on the shelf these days. I want to know is this the process you still use? Are you still using the raw pack method? I enjoy watching you canning and trust your process. Thanks

They are cooked and soft but still distinguishable cubes!

I did carrots and forgot to allow the stream of steam for 10 minutes 😳 is that going to be ok????

the issue you have is that the canner likely did not get up to the required pressure...letting it vent for 10 minutes pushes out excess air so that pressure can build...is it going to be ok?....perhaps, but I cannot say for sure.

@@susan3733 Put them in the refrigerator. You can take off the lids also, and then reapply lids and do them again the right way.

@@susan3733 It's not as much about them just sealing. They have to come up to temperature because they are low acid.

I tried to can sweet potatoes and they, for me, tasted disgusting (sorry, but that is how they tasted). I bought two different sweet potatoes at different stores and did two different batches in two different days and both times I threw them in the garbage. Have not found a way to can them and like them. I am so disappointed.

Have you tried doing a simple syrup? I'm trying mine in a simple syrup with maple syrup. From what I've read plain water really pulls the sweet out and doing even a light simple syrup helps a bunch
