i still think shes the best character full stop with Obi a close second.

I think I read that Dave Filoni wanted the audience to hate her at first and then see her develop to the amazing character has become.

I would say Luke, but with Clone Wars and Rebels we got to see all of her development. She is for me easily the best character from prequel Era along with Padme.

Considering that she was actually around 14 when first introduced.... a headstrong, temperamental teen, with a heart of gold.... who probably still remembered a 'fake jedi' trying to take her from her home, and that her family refused to believe her about it, until an actual Jedi arrived. Is it any wonder that she was inherently rebellious, and really distrustful of those in authority? Those who hated her for being such an arrogant teen, need to understand WHY she was like that. Her life with the Jedi also needs to be considered.... as she says to Rex, 'the Jedi are supposed to be arbitors of peace - but as a Jedi - all I've known is war'. Her family and community refused to believe her about the fake jedi... and then the Jedi Masters refused to believe her, that she wasn't responsible for the attack. Despite all of that, and having to deal with some extra-ordinarily hard circumstances (leading lost padawans to safety), she has remained true to herself. The Martez sisters comment on this, when they find out that she was a Jedi, that she embodies the spirit of what a Jedi should be.

Not all mandalorian armour is made of beskar. It's quite rare and massively expensive

I can't remember if this is the canon, or a different non-canon explanation, but I read that at this point beskar has become so rare on Mandalore that newer Mandalorian armour is only a few percent beskar. Pure beskar plate is only present in much older armours that have been passed down through generations at this stage.

Beskar is absurdly rare and very expensive at this point in the star wars timeline. Its essentially a metal that has the price tag of real life precious metals like gold or silver, combined with the imperviousness of vibranium or adamantium from Marvel comics. Mandos who have an entire armor set of beskar likely inherited it from very important ancestors, and as such, those armor sets were zealously guarded within families and/or clans. The majority of mandos at this time had to make do with Durasteel, the star wars equivalent of real life steel alloy. It could take some hits, but was nothing when compared to the miracle metal beskar. Boba Fett's armor, at least in Legends, was also made of Durasteel. In contrast, clone and stormtrooper armor was made of plastoid, in other words, really, really hard plastic.

What's awesome is, if I remember correctly, there was a story or Q&A or something from the writer of Ashoka, saying that they intentionally made Ashoka like an annoying teen that no one would like. The very early seasons of TCW were rough, but this was apparently by design. And man, they did not miss with the payoff of character development. Just hope they don't milk her into the ground like they did Luke.
