This Red Chili Recipe is the very best chili recipe I ever developed. My first video on how to make Red Chili has over 100,000 views. I made the mistake of putting music throughout and many found that to be very distracting so here is the new video completely reproduced with no background music. my mom always served her chilie over mashed potatoes, with a little pond in the middle. I thougt every one ate that way, till I grew older and saw differently; but still, to this to day ( I'm 67) I still eating my chilie (with the kidney beans) over mashed potatoes with a pond in the middle. Old habits die hard, I guess. Can't wait to try your recipe (with the beans over mashed potatoes. :)

I made Texas Red Chili yesterday, then put it away in the fridge, and let it warm for several hours in the crockpot, today. Served it with corn bread and brown rice for supper. Everyone said this recipe is definitely a keeper!! Thanks so much. I look forward to using more of you recipes.

Just made this tonight and ❤️❤️❤️It one thing we didnt do is put as much cayenne pepper in ours and we should have our need ed more heat in our opinion used some jim beam loved the touch that brought. U dear sir get a 12/10 for the whole schpeal

The cajun chef you mentioned was Justin Wilson from Louisiana and he was not cajun, he was from Canada but took on the accent and started cooking down here. He used to live in Denham Springs, La. He was a comical person lot of fun to watch. Your Chile looks good, I'll have to make some one day.

Best way I've found to make chili is to use lean stew beef. His mix or chuck is good. But leave in chunks. You get a better malliard reaction/sear and flavor. You have to chew it and that brings the flavor of peppers and other ingredients out more than using ground meat. Be aware that alcohol does not fully cook out even though you get up to simmer. I'm a former addictions counselor. Even the remaining flavor can trigger some people.

That’s for sure delicious, but what amazed me the most is how neatly you have all your kitchen utensils hanged everything on hand and on site. For someone who's not a cook or chef your knife skills are very informative & very professional, & as an Aussie we don't have poblano chillies aren't very easy to get a hold of, I like the fact you ground your own meat too that looked awesome, I love the fact that you know the science behind what's going on in the pot too, that's awesome, but the recipe sounds very delicious, I just subbed because of the way you teach knife skills & the way you make things sound easy plus the science behind what's going on, awesome stuff, God bless mate

Best chile recipe. I've even made it with ground chicken instead of beef and it was fabulous. Today I decided to eliminate the jalapenos and just used more poblanos (5) and didn't deseed them. Didn't add the cayenne since I thought it might be too spicy with the seeds in the poblanos, but it wasn't. Added some afterward to taste. Overall, this is a 5 star recipe.

Thanks for this video, learned a better way to handle onions and learned another great Texas chili recipe. I do garlic the same way you do, I remove the scab before removing the paper. I also use a regular table (butter) knife to remove the white part of jalapenos - the rounded tip is perfect for this and the white part scrapes right out. I live in Cajun land, they serve chili over rice down here. Being from North Texas, I garnish with shredded cheese and crumbled saltines. I'm not a fan of raw onion so I leave that off although it is traditional in N. Texas.

All of your recipes are so well put together and you explain things in a way that makes things easier to understand. Some professional cooks are too busy trying to promote a product instead of illustrating a recipe. BTW, that chili was a beautiful color.

Very thorough explanations of the cutting . Some dont know- so you explained things very well. My mother still says- a dull knife will cut you quicker than a sharp one. It is absolutely true. Knife skills are great but as you said- take your time. I am interested in using pablano peppers in my chili. My fiancee loves Jalepeno peppers so I can easily remove the insides and maybe we can both enjoy this recipe. I thank you for your patience and your videos. Bless - Stacy from NC... oh and PS- thnk you for mentioning the Cajun cook- Mr. Justin Wilson. Lifelong fan here. I have not mastered his technique of measuring of spices but maybe I will someday. lol :)))

I read through most of the comments on here and I can't believe how ignorant and petty most people are......if your such an expert chili maker, then go do your own video . I appreciate someone who takes the time to explain THEIR METHOD ......I'm here to learn the various techniques of many cooks.....then I eat the meat and throw the bones away. I like to release the fresh taste of garlic and onion into the meat before it cooks down into a less tasteful mushy mass myself. I find myself doing it often in comparison to a lot of YT recipes. Makes perfect sense to me! Nice channel. Thanks for sharing!

I have your same pan, bought from a restaurant supply off the South Sam Tollroad in Houston between Richmond and Bellaire. Love the way it cooks, but not the handle. It rolls in my hand, not strong enough. Will have to try your recipe. Thank you for posting it.

If you pay attention to everything he says, pass his written test, and reproduce his recipe with his approval, you should get 3 college credits for cooking Texas red chilli.

The "setup" method you describe is called "mise en place" in French and no good chef would proceed without it. Gotta say, I had to skip over the knife and onion/garlic cutting, at 82 having learned how to do it, long ago. Nice recipe, although as a born and bred Northerner, I like my chili with 3 kinds of beans. Not a meal, without them!

I've watched a few of your videos and I found that each is very informative and interesting. I will try the Texas Red Chili, the Chili con Queso and the Trotter House Chili Con Queso. Each of these seems to take a serious approach to use proper ingredients and processes that lead to a dish with excellent flavor.

Just a little tip from someone in the business. If you're getting ground beef that's brown in the middle. They are not chilling it properly. You grind it and put it in the freezer to get it all to temp. No, it's not freezing it. Then you pull it out and wrap it for sale. Skipping this process is why it turns brown in the middle. That's why all the ground beef I buy in my store. Never turns brown in the middle. If you're buying ground beef that does. Well you're buying from a grocer that one, don't know what they're doing. Two, they just don't care and will sell you anything for money.

I make a giant thin beef patty with one pound of the beef and brown it very well on one side in a 12” non-stick skillet, then break up the meat and add it to the rest in the pot. Adds a lot of flavor.

His terminology, techniques, and execution are all wrong. Only things he did right was mince the garlic and roast the peppers. He even fucked up browning the meat and sweating the veggies.

you are a great teacher!! maximum respect - In Germany we call it Chili con carne - and it is ALWAYS with beans AND corn - so I learn I can make it without the beans (and the corn) cool... I will try something like this in short time. thanks for this much of inspiration...

Yummy. But i like Fritos corn chips at the bottom of my chili. I live that contrast & crunch with cheese & onion of course. Pasta is okay but ever since I had chili with corn chips I was hooked.

This looks great! But I would have put the garlic into the meat/onion mixture for a minute before adding the tomato paste. And instead of adding all flavorless water, I would added half water and half spicy low sodium V8 juice. But that's just me. 😁 Also using an oven safe pot, bring it to a boil then put it covered into a preheated 230° oven for 2 or 3 hours. You can check it about half way for liquid and give it a stir, but you probably won't need to add much liquid, if any. And it wont burn or scorch. You can reduce any excess liquid on the stove top if needed. This is how I make my Sunday gravy for macaroni.

Nice process, a little wordy. I’m not sure you’re right about all the alcohol cooking out. A lot of experts say not, I’m sure it’s negligible, but people in a step process make absolute commitments. I find dry toasting my spices enhances the flavor profile much the same as curry.
