A few months ago I was traveling with my mom and we decided to hit up the Whole Foods salad bar for dinner. That was when I first discovered their Garlicky Kale Salad! I was super excited to see that it did not have any oil in it. The ingredients were all simple and very similar to what we use at home. After trying it, I immediately texted Brian a photo of the ingredient list and asked (okay... told) him to try making it at home.
We started experimenting and honestly, I think we pretty much nailed it (kaled it?) on our first try! We've made it a few times now, and while I don't have the original to compare side by side, I think it is pretty darn close.

@Kelly's Finally Woke Congrats on the weight loss; I'm down almost 75 pounds already. I crave real food, unlike before when I'd "diet" I would want to eat high calorie/high fat foods. But now I crave things like kale (my fav is kale with mango&pumpkin seeds and a splash of lemon juice), groats, potatoes (any type) and my current fav is apples (the honey crisp are really good, as are envy, pink lady, golden delicious, oh heck I love 'em all).

My grandmother taught me this growing up when we harvested greens, broccoli, lettuce, etc from the garden - soak the produce in salted water, like 1 tsp salt to 1 qt water - for 5 or 10 minutes. The bugs release from the produce. Rinse well, spin dry and you are good to go.

@@KrocksInTheKitchenKitchen, you don't wait till you 'come across any, you always soak greens, esp broccoli and kale in saltwater, then you never have to worry about it. It is something you ALWAYS do.

@Colleen De koning I think the person was saying you don't really notice the bugs first - you're not going to come across it. But yes, everyone does their own thing. If you want to check, get some organic kale, romaine lettuce, or red leaf lettuce, hold it up in the sun or right near a light and you'll see how many bugs are on greens - sometimes none, sometimes some, sometimes so many - living, not living - but they're not obvious without really looking. So that's why people automatically rinse them out.

Check out Ann Esselstyn’s method of stripping the stem from Kale. Hold the thick end of a stem in one hand and use your other hand to rip the kale leaf off the stem (starting at the top of the stem and rip toward the tip of the leaf). It is so quick and easy!

My gratitude for this recipe! I had a soup and salad dinner, and the soup was a Vitamixblend of kale stems, leftover spinach, leftover piece of onion, a shake of garlic powder, smoked paprika and leftover Griller potatoes for creaminess (I ran out of nutritional yeast). Mild hot soup and beautifully flavorful garlicky kale salad. Yum and yum! (and I put those stems to good use too -- no waste)..

Thanks for reminding me to use up leftovers in soup or stirfries, saves a heap of money and most of the fibre is in stalks etc.

I made out today, good prep lunch. I love this. I don't live near Whole Foods but one of the few times I went there, I had a sweet potato Black bean chili. Now I make it at home. Thank you for the deliciousness.

I bought kale today and ordered nutritional yeast because you guys got me so pumped about this recipe! My family and I already eat suuuuper healthy(I think?) but I need to step and think outside the box. So thank you guys for some fun inspiration. My own weight loss adventure was a period between 18-20 years ago so I have found my thing but I am really enjoying your story and fun videos about your adventure and yummy food!

I almost checked on you guys, but I figured you deserved a break. My birthday was the 15th Jess, we’re both November bdays!!! Happy Birthday :) okay about the kale and the dressing, YUM! I’m excited to try it, and also excited to try the dressing on a romaine like some sort of a lemon vegan Caesar. Kale and other greens- nobody really likes them, but when we eat them our stomachs are so pleased that the messages passed to our brain is all positive. It’s all that fiber. Plus it’s so nutrient dense. I’m remembering a video Dr Gregor did about the mood gut brain relationship. For sure greens are like number one for a happy life. Washing my kale..... so I eat all those stems when I buy it pre washed. But when I buy the whole kale I do the trick that the Essylstien girls (ladies) showed on their KZfaq page. Jane Essylstein I know I’m spelling that wrong.... that essentially just hold it out in front of themselves and pinched it while tearing it quickly. Mine has never had bugs but it seems to be like muddier than any other produce. And I wash it in a colander with running water, and yes I kind of massage it while cleaning it. Also can’t comment without talking about your Hello Kitty salad spinner!!!!!!!!! I love it. Hello Kitty that girl has everything, even salad spinners. Haha haha

Blanching the kale for a minute or two will also soften the kale...easier and quicker than the massage. To clean, rid the leaves of bugs and sanitize (lol)...put white vinegar into a spray bottle and spritz the kale, let set for a minute then rinse throughly with running water. I use a knife to cut out the stems...easy peasy. Looking forward to trying this dressing.

Try pouring boiling water onto the cleaned kale then immediately cool it off with cold water or a ice bath if you want to be fancy. This helps break the kale down easier and the dressing sticks to it better. It’s also a pretty bright green. I think when Jessica sings as she eats is adorable! This is so DANG good. I added a little tahini and vegan Worcestershire for a total kale Cesar vibe. Amazing with watermelon radishes. Thanks for pointing out how much easier, fresher and tastier it is to use the fresh bunches of kale than the bagged stuff. I always knew it on a subconscious level I guess but since you articulated it it makes so much sense and I’m never going back.

I keep my fresh kale fresh in a glass of water on my fridge door shelf, I trim about 1/2 inch off the stems so water can get sucked into them. I clean and use the kale one stem at a time. Keeping the stems in water makes it krisp and it keeps much longer. I strip off the leaves in one big pull, then tear them up and massage them. I have never seen bugs in my kale. I dry it on a towel before de-stemming. Thanks for the recipe looks yummy. I need to get liquid aminos which they now have at my Walmart.

This is by far my favorite salad right now. Ate the entire bowl myself last night! Didn't add Chickpeas.... just pure kale yumminess. Don't leave out the lemon zest! So so good!!😁

I love kale :) we grow it in our garden!!!! This looks really good too, I will totally be making this soon. I also hate bugs in my kaleor anything else ewww. I put it in my tofu scramble too its so tasty in a south west style scramble with red capsicum, onion, diced potatoes and spices. I just put it in towards the end and its amazing!! Plus you can make it ahead add in avacado and put it in a tortilla like a breakfast burrito and put hotsauce/picante sauce on top

Looks delicious! I am such a variety fiend so I might be tempted to add some mandolined radishes, sliced green onions, and maybe some black sesame seeds on top. Thanks for figuring this out for us! I use ACV (apple cider vinegar) in a dedicated tub full of water to wash my kale. I have a dedicated veggie brush to help clean it. Jessica, I’m similarly wired with regard to gross or scary stories. I support your right to not be exposed to that nonsense.

This is very similar to a recipe I make called Copycat Kale Cafe Salad, named after the salad served at Kale Cafe located here in Daytona Beach. I’m excited to try your version!! 😋

This looks super yummy! I work at Whole Foods in prep foods department so I've made this a few times. The recipe we use has tahini in it as well. It's really delicious but maybe it would make it more calorie dense? Not sure. Gonna def try this version👍😁

I grow kale in my greenhouse which is so much more tender than the big bunches in the grocery store. It's November in the PNW and my kale is still growing! Very hearty and easiest to grow. I need to try this.

I watched this yesterday and kinda smiled at just how much people don't like kale because it's so darn hard to chew. At my age (71) I have to be careful I don't break my teeth, so I've learned a trick about kale. If you wash it and dry it and THEN stick it in the freezer .. when you take it out and crush it in the bag you stored it in, it makes smaller bits and is softer. I actually use the recipe you just described, but warm it on the stove (or in the microwave) to soften it even more. You don't have to cook it all the way, but if you do want the cooked version, don't throw the water away. Drink it or use it for a stock. There's a winter recipe here in Holland called hutspot or stamppot where they mash kale in with boiled potatoes and cover with gravy. I have my own version of that because I add all kinds of other veg to the pot and mash that together with the spuds (thus the name I guess). Of course, I also zap it into a porridge and mix it in with my soup base. Gives you all the vitamins and none of the toughness. P.S. Have you ever tried the homemade cashew or silken tofu type of ranch dressing? 🌹

There's a Dutch dish where kale is mashed together with potatoes, it's delicious! When I grow kale and it's the end of the season, I rinse it and then freeze the whole leaves and stalks. When I take it out of the freezer it's easy to crumble it off of the stalks and add it to stuff.

Another Dr Gregor thing, he looked into studies on kale- and it turns out Kale is so wonderful bc of the fact that steaming it in the instant pot actually increases the nutrients available. One of the rare foods that does this. I’ve found myself chopping it and adding to spaghetti/pizza sauce and of I chop it enough my kids don’t know it’s there. For me, knowing that it’s better cooked, and how good it is for my mood I’ve tried incorporating kale in many things like soups, pasta dishes.... etc. another thing I’m not sure I’ve shared with you guys is that I actually have only lost like 45 lbs and that’s about half of my weight loss goals, but I have have completely got off antidepressants/anxiety prescriptions that I’ve been in since I was about 18. And I also can trace back clinical depression to about 10 years old. And this happened in a matter of about 6 months of plant based. So mood and gut connection is a huge part of my testimony for this lifestyle, and one more reason I won’t go back. Hope this helps bc kale is easily the best replacement for spinach when cooking, but still so good in salads like this one. You can’t go wrong. Your brain remembers how much you like it and somehow we end up addicted to greens. Okay guys love this video and can’t wait for next week!

I loved the video. I have a garden full of kale and mustard greens. Do you guys have any good ways of using mustard greens? I have been putting kale and mustard greens in the instant pot with sliced onions, garlic, veggie broth and coconut amino and cook on manual for 5 minutes.

I haven't been using fresh kale. Only frozen, chopped, and including it in my one dish meals. Now, I have to try this, so will have to buy some fresh. The dressing sounds great. A little thick for me. If there's anyone else out there who never got used to the thick, milky dressings. Here's a tip. Use the cooking liquid (Aqua Faba) from the garbanzos to substitute for oil. It has the exact mouth feel of oil, so can be a good to thin some recipes, and use as an oil substitute in any oil and vinegar dressing.

Great recipe. I'll probably chop it more. I never discard the stems. I put them in my smoothie cup and process and eat them raw. Mixed in a WFPB healthy kale smoothie I never notice them and get lots of good fiber!
