Ingredients
RED VELVET CAKE:
2.5 cups cake flour [280 g]
2 tsp baking powder [8 g]
1/2 teaspoon baking soda [2.5 g]
2 tablespoons unsweetened natural cocoa powder [7 g]
1 teaspoon salt [6 g]
1/2 cup unsalted butter, softened to room temperature [113 g]
1.5 cups granulated sugar [300 g]
1/2 cup canola or vegetable oil [120 mL]
4 large eggs, room temperature and separated [80 g egg yolk + 120 g egg white]
1 Tablespoon pure vanilla extract [15 mL]
1 Tablespoon distilled white vinegar [15 mL]
1 tbsp gel red food coloring (gel creates more vibrant red than liquid coloring) [15 mL]
1 cup buttermilk, at room temperature [237 mL]
CREAM CHEESE FROSTING:
16 ounces full-fat block cream cheese, softened to room temperature [453 g]
2 sticks unsalted butter, softened to room temperature [227 g]
4 cups confectioners’ sugar [480 g]
2 tbsp all-purpose flour [16 g]
1 Tablespoon heavy cream or milk [15 mL]
2 teaspoon pure vanilla extract [10 mL]
1/2 tsp salt [3 g]

Hey, Kurt! Love your videos and recipes. Easy to follow. Question: Can I use all purpose flour instead of cake flour?

Hi Cam. If cake flour is not available, you can substitute with all purpose flour and cornstarch: for every 1 cup of cake flour needed, add 1 cup of AP flour, subtract 2 tbsp, then add 2 tbsp of cornstarch, and sift this together. This will act similar to cake flour. Cake flour has a lower protein content compared to AP flour - it creates a more tender texture, finer crumbs, and better rise, which are ideal for red velvet cakes like this. And substituting with AP flour + cornstarch combo imitates that. Hope this helps! :)

Hello - thanks for your comment! I'm glad you like this recipe and that your Red Velvet Cake turned out well. Yes, you can make cupcakes using this recipe. The cooking time will be about 15 to 20 minutes at 350 degrees Fahrenheit for cupcakes. I'd say test it at 15 minutes with a toothpick. If it's not yet cooked keep checking every 2 minutes. Hope this helps! :)

Hi Akai - if buttermilk is not available, for each cup of buttermilk needed, you can use 1 tablespoon of white vinegar or lemon juice plus enough regular milk to measure 1 cup. Stir, then let stand for 5 minutes. You can also use 1 cup of plain yogurt or 1-3/4 teaspoons cream of tartar plus 1 cup regular milk. Hope this helps!

Yes, you can definitely make red velvet cupcakes with this recipe. I haven't personally tried it, but I'd estimate this batter would make about 24 - 30 cupcakes, depending on how high you fill the cupcake liner. Hope this helps! :)

Yes, you can definitely use this batter recipe to make cupcakes. Same temperature - just reduce the baking time to 15 to 20 minutes, or until a toothpick inserted into the middle of a cupcake comes out clean. Hope this helps! :)

Hi Taira, I'm glad your Red Velvet Cake turned out well! The sugar + cream of tartar technique used in the ube / mango / choco mocha cakes are for a chiffon cake. For chiffon cakes, the structure of the cake is created by the air bubbles trapped into the egg whites when you whip it into the meringue mixture. The air bubbles are what leaven the cake when it bakes. Cream of tartar and sugar helps to stabilize the egg whites, so that they whip up and gain volume. This Red Velvet Cake is technically not a chiffon cake. Red Velvet Cakes get most of the aeration in the batter from the acidic ingredients (buttermilk and vinegar) reacting with the bicarbonate in the baking soda / baking powder to create bubbles. In this recipe, I whip up the egg whites separately just to add a little more lightness to the cake as an extra boost. But don't use cream of tartar since the buttermilk/vinegar + baking soda/powder do most of the heavy lifting. Hope this answers your question :)

Hello. If buttermilk is not available, you can substitute using 4 alternatives: for each cup of buttermilk, you can use 1 tbsp of white vinegar or 1 tbsp lemon juice or 2 tsp of cream of tartar - plus enough regular milk to measure 1 cup. Stir, then let stand for 5 minutes. You can also use 3/4 cup of plain yogurt plus 1/4 cup of regular milk. Any of these 4 alternatives will act similar to buttermilk. Hope this helps!

Hi Gina, thanks for your question! If powdered sugar is not available, but you have regular granulated sugar, you can make powdered sugar if you have a blender or coffee grinder. 1 cup of granulated sugar will make double the amount of powdered sugar. For every 1 cup of granulated sugar, add 1 tbsp of cornstarch (or whatever starch you like), to prevent clumping. To make 4 cups of powdered sugar needed in the recipe, add 2 cups of granulated sugar + 2 tbsp of cornstarch (can also use tapioca flour or arrowroot powder) into a blender, and blend for 30 seconds to 1 minute. Hope this helps! :)

Just a little bit of flour (or cornstarch) in the frosting makes it a little stiffer and smoother, and helps it hold (not melt) at room temperature. But don’t add too much, otherwise the texture will become too grainy. Generally, it is not safe to eat raw flour or cornstarch etc. But with this very small amount (2 tbsp) it should be safe. And it's optional - so if you prefer not to put it in, you can leave it out, and the frosting should still work. Hope this helps! 😊

Hello Kurt, I like to make this recipe. It really looks delicious and I appreciate how you demonstrated how to make it. I have some questions. For the frosting is it really necessary to add 2 tbsp of flour? just asking this dahil hindi siya dumaan sa pagluto. When it comes to flour like when I make polvoron ay niluluto kong mabuti to avoid stomach problem. For the baking pan, I can't find 9" what I got is 8" I just purchased it cause I really need to bake this cake next week. Can I use it? Thank you so much for sharing. 😊❤️and God bless🙏 .

Hi Shalom - if you don't have an oven, can steam the cake instead of baking. But you have to half the cooking time - so I estimate about 20 min of steaming as steaming cooks faster. Steaming also dries out the cake more, so add more vegetable oil to the wet ingredients. So 3/4 cup of vegetable oil (instead of 1/2 cup in the recipe). The flavor will also be a bit different. Baking in oven browns the cake a bit. Whereas steaming will have more of a pure flavor of chocolate. But will not have the browned rounded flavor profile. Hope this helps! 😊
