HUMMUS
Ingredients:
400 gr canned chickpeas (~14 oz, ~0.9 lb)
6 tablespoons tahini
1 lemon
6 cubes of ice
2 garlic cloves
2 tablespoons extra virgin olive oil
Half teaspoon salt
to garnish:
ground sumac
ground cumin
2-3 tablespoons extra virgin olive oil
Parsley
Directions:
- For a perfectly smooth hummus first you need to peel the chickpeas. Add 400 gr
canned chickpeas in a large bowl and rub to take the skin of.
- Fill the bowl with water and skins will start to float. When you drain, skins will group
on water and it will be much easier to collect.
- Add peeled chickpeas, 2 cloves of garlic, half of a teaspoon salt, 6 tablespoons of
tahini and 2 tablespoons of extra virgin olive oil to food processor.
- Squeeze a lemon juice and run for 7-8 minutes on low-medium speed.
- While the food processor is working the hummus will get warm. To avoid that add 6
cubes of ice gradually. ıce will help to make a smooth hummus as well.
- After a couple of minutes hummus will be ok but not smooth enough. Don’t give
up and continue until the hummus is creamy. You can run on high speed at this stage.
- Taste and adjust the lemon, tahini and salt to your taste. Garlic and olive oil always
need time to settle. If you have 2-3 hours before eating the taste will be better.
- When the hummus is ready put on serving table and make a little crater with the
back of a spoon.
- Sprinkle ground sumac, cumin and parsley leaves. Last but not least pour 2-3
tablespoons of extra virgin olive oil.
- Enjoy your creamy, tasty, simple hummus with your lavash or chips as your spoon!

I have made your recipe so many times because it’s truly authentic. Having lived in the Middle East for 14 years, I was hard pressed to find any hummus that tasted like the hummus I was used to eating. In my little village in the middle of Germany, I`m the "King of Hummus", now( which was not soooo difficult). I prepared the hummus "Refika-Style". But I told everyone, that you are the star. Normally I don’t write comments to let know if it was successful, but for the ones who have doubts; try it! I tried it and it was delicious. In stead of ice cubes i used cold ice water (6 spoons). Tesekkurler Refika. Seviliyorsunuz!

God people are so "woke" that they're asleep lol All these people talking feeling people's "energy" over videos and pictures and shit lol Energy is a physical current. You literally feel it from being in the physical presence of someone else. It's like the feeling you get in a room of people. Or when someone walks in the room with you. before you even see them you feel their energy. It's like the feeling when you try and push the positive end of two magnets together. It's a physical thing. People get energy confused with a "vibe". Vibe is a better word to use that actually makes sense. Vibe has been turned into a work that means more like a person's demeanor, or expectations of what kind of energy that they give off. Millennial "woke culture" is so lame. These kids lack so much self awareness that they don't even know what the back of their hand looks like due to their iphones being in their face 24/7

I love Turkish food and Hummus and it's not easy to find good Hummus. The way you have made it just by looking it started making my mouth watering. I make myself some time but yours look so delicious. It's not only the Turkish food but every thing about Turkey is so good. I visited Turkey long long time ago and loved it. It is not only mine but this is one of the top destination in the world to visit. It is like whole package deal. The great architecture, Historical monuments, rich culture and on the top of all this great people. Love Turkey.

Been making hummus for years, but never soaked them to get the shells off. I tried it today and it was a great tip…..so smooth and creamy. I added roasted red peppers and roasted garlic, my kids love the sweetness of the roasted peppers. Great recipes. ❤️❤️❤️from 🇺🇸

I have been working with your recipe and find it to be perfect every single time! Depending on who comes over, I add more or less garlic and paprika before serving. Made it today with my granddaughter and she ate it along with the chicken (she literally dipped the chicken into the hummus). I made this once according to you directions and it was great. Next time I will add sumac and cumin. Thank you for this video, Refika. I have always loved this stuff but never knew how to make it---and the hummus from the supermarket is very expensive and gives me very bad heartburn. When I made it according to your instructions, without any chemical preservatives of course, it was delicious and there was no heartburn!

I love and appreciate your videos!! Thank you. I am in the Mediterranean climate in America... SoCal, trying to emulate your dishes in an organic-raw-vegan manner (not roasting the hulled sesame seeds in making tahini). I am a complicated person trying to be simple (and not always so good at that). So far, besides your ingredients, I've added flat parsley, tumeric root, hemp hearts, corriander seeds, cumin, black pepper and some nutritional yeast and too much raw garlic, so I compensated with cinnamon (which added a fabulous burst!), but I think I need more lemon and better quality olive oil. It's kina blah (I salt-avoidant). I learned that the sumac seasoning is NOT the same sumac I see growing everywhere here in the chaparral, but that the sumac used in your area also grows in America's midwest. I will add beetroot and chives next, to see what happens. I love your videos!

Awesome recipe..i can tell because i’m an arab. For a lighter version of hummus add a tablespoon of yogurt. It also gives it a slight tang 😋

Genuinely the best homemade hummus ever. I've now done it 4 times and it doesn't fail. The longest time is spent taking the chickpea skins off. After that, a cinch and SO yummy!

Wow!!! That skinning technique is like magic!!! Just like when I found out how to skin garlic effortlessly. Put the garlic cloves in two bowls (making a circle/globe) and shake for 10-15 seconds. Open the bowls and BAM!!!! Skinless cloves! I can't tell you how many of thousands of cloves I peeled by hand (and knife) in my past chef career. If I only knew this secret back then. The chick pea skinning goes right up there with the garlic clove!

Hummus came to Turkey from Syria many many decades ago. It's cultural and geophraphyical junction here. Traditions, foods, deserts. Same people living in the southern part of Turkey. So kitchen is common❤

@Edna Turner yes it is true, but not only arabs and greeks, also armenians, caucasians . Turkish cousine is a well mixture of many cultures. Wheat, meat, spices, vegetables, olive oil, meze,deserts. But we are weak about sea food.

I ate in a restaurant in Istanbul, very near to the Basilica Cistern, that made one of the most amazing hummus I have ever eaten. They said their secret was browned butter instead of (or complimentary to) the olive oil.
