BOULANGERIE LE SOLEIL LEVAIN -
Savoillan is a commune in the Vaucluse department in the Provence-Alpes-Côte d'Azur region in southeastern France. Savoillan is fortunate to have an old-fashioned bakery where the bread is made with natural leavening, cooked on a wood fire with organic flour.
Emmanuel and Chisato Delalande have developed a specialty of bread and cookies in a traditional way. The wood-fired oven was built in 1925. A particular mode of cooking requires very precise heating before cooking the bread, placed on the stone sole. And this oven has been preserved by the prefecture and villagers.
And the spring water from mount Ventoux was developed in Roman times (753 B.C- 476). BOULANGERIE LE SOLEIL LEVAIN has used this water for making bread.
The type of natural leaven:
1. Sourdough (some bread contains yeast, but some doesn't)

I went to France twice to visit the battlefields of my Grandfather and discovered “Le tradition”. Traditionally made wood fired baguettes are the finest bread on the world. The fine, sharp crust and flavour of the French flour is unique. A Tradition, tomato, salt and pepper and I am in heaven. I envy you French and crave your baguettes everyday. I continue my search to find something similar in Australia, but alas, only disappointment. God bless your Boulanger’s. Beautifully produced video.

I live in Philippines, and have similar issues here... But I have solved it ! Just follow two posts (both in french unfortunately), one on how to make sourdough, very easy unlike these videos that tell you that the process lasts 7 days ! the second on how to do baguettes with the sourdough... The biggest secret is in what we call in french the "TPB" or in english, "base temperature" It is a simple rulke that indicates at what temp you must prepare your dough. If you do it by hands, rule is 75 : temperature of ingredients + ambient temperature. If you use a mixer (like a kitchenaid), rule is 65 (as the dough will warm up in the bowl). Usually we play with the water temperature as it is easier than having to store the flour in the fridge... Another secret is to find some good flour, equal to what's called in France flour T65, that you can easily fdind here : basicingredients.com.au/shop/grands-moulins-de-paris-imported-french-bread-flour-t65-traditional/ first post on how to do a sourdough : (you can activate subtitles in english) kzfaq.info/get/bejne/rKqPlNiX16i4mok.html second post on how to do french baguette : (also subtitles available in english( kzfaq.info/get/bejne/b9Geq5qi1NOqd40.html I hope you will soon taste again "real" french baguettes 😉

by the way, I would highly recommend to use a rectangular pizza stone for your oven, if you decide to bake breads (not only french baguettes) as this will boost your oven to quite a professional baker oven 😉 If you go for it, I bet that your friends and family will become your best customers ! he he he

@@tripackonetooth4910 thank you for taking the time to offer your advice and comments. I am progressively have better results with my baguettes. I do buy the T65 from Basic Ingredients, which is great, and use pizza stones. Most of the time I make them traditionally by proving the dough over two or three days using a poolish. I am about 80% there. I struggle to get the lightness and sharp crispness of the Boulanger’s. But I persist. Thanks again. N

The amazing thing about this videos is that we can see how is made, the effort the skill, and the amazing result, the bad part is that for us living in another part of the world, probably will never test it, jus imagine how it taste…. Just wondering how is waking up,going to the bakery every single day to have this available for us, lucky people of that town

The skill it takes to make such a simple thing like bread such as this boulangerie does is incredible, it's art, not just mere bread. We have an Italian style bakery in my city that's been open for 123 years, they make their bread in much the same way, but on a bit of a larger scale. Always a line out the door and it has never changed in the 25 years I've been going there.
