Some small notes about Joker's pose: -Despite nearly having been hit, Joker clearly isn't taking his attacker seriously as shown by his smile. This helps to show his confident and somewhat cocky nature in battle -To further that he's being cocky, Joker has his dagger out behind him, showing that he's possibly playing with his food. If he was taking the fight seriously, he would already be counterattacking -Joker's left hand (the empty one next to his head) looks as though it should be holding a gun due to the position of his fingers. This is furthered by the fact that in Smash, Joker fires his gun with his left hand instead of his right since he carries his dagger in his right hand

11:20 to go on about Sonic's in a bit more detail, I'd like to add on the fact that Sonic has one foot in the air similar to Mario, but throwing more style into it. It shows that Sonic was supposed to be a cooler Mario back in the 90's. Everything that Mario can do, Sonic can do cooler. You put Sonic's key art right next to Mario's, it will look as if they were meeting each other's attack head on, like they have some sort of rivalry going on. Mario with a stern look of confidence on his face and Sonic smiling, looking directly towards with a face that just screams "I got this". It's referential, it shows history, and shows personality all in one.
