*Quick Mutton Curry Recipe*
*Ingredients:*
- 1/2 cup oil
- 2 medium onions, chopped
- 1.5 tsp salt
- 1 black cardamom
- 1 cinnamon stick
- 3 cloves
- 1 bay leaf
- 3 to 5 dried red chillies
- 1.5 tbsp ginger garlic paste
- 800g mutton, diced
- 1.5 tsp chilli powder
- 1.5 tsp coriander powder
- 1 tsp cumin powder
- 1/2 tsp turmeric powder
- 2 medium tomatoes, chopped
- 1/2 litre water
- 1 cup yogurt
- 1 tsp garam masala powder
- Finely chopped coriander leaves, for garnish
- Chopped green chillies, for garnish
*Instructions:*
1. *Prepare Base:*
- Heat oil in a pot. Fry onions, black cardamom, cinnamon stick, cloves, bay leaf, and dried red chillies until onions are golden brown.
2. *Infuse Aromatics:*
- Add ginger garlic paste and cook briefly.
3. *Cook Mutton:*
- Increase heat, add mutton, and fry until browned.
4. *Season Mutton:*
- Add salt, chilli powder, coriander powder, cumin powder, and turmeric powder. Cook briefly.
5. *Add Tomatoes and Simmer:*
- Stir in chopped tomatoes. Simmer with water until mutton is tender.
6. *Incorporate Yogurt:*
- Stir in yogurt and cook until heated through.
7. *Finish and Garnish:*
- Sprinkle garam masala powder. Garnish with chopped coriander leaves and green chillies.
8. *Serve:*
- Serve hot with your choice of bread or rice.
