This time, I made1 loaf of bread made with rice flour (Mizuhochikara rice flour).
This is the rice flour bread that I continued from the last time.The size of the bread is nearly double size from the last one.
As a gluten-free family(My family), this is one of the recipes that works as an alternative to wheat bread.

"Rice Flour Bread Recipe"
ab.120×120×H120mm bread mold
Capacity:ab.1728ml
【Rice Flour Bread Dough】
Rice Flour (Mizuho Chikara)  280g
※Rice Flour (Alfification) 15g
Water   290ml (Around 35 degrees is desirable)
Dry Yeast 4g
Oil  15g
Cane Sugar 20g
Salt 2g
※Rice Flour (Alfification)
Rice flour made by milling pregelatinized rice that has been quickly dried by heating(Japan Rice Flour Association)

理解力がなく… ラスト5分というのは30分のうちの最後の5分ということで合ってますか? 米粉のパン作りにハマっていて、ぜひこちらのレシピで作ってみたいです!

コメントありがとうございます♪ ↑の理解で大丈夫です。米粉パンは焼き目がつきにくいため、蓋を外して少し焼き目をつけるようにしました。 とはいえ、上面の焼き目は薄いため最後は焼き目の濃い下面を上にしてます、、🍞

アルファ化米粉を使用することでどのような効果があるのでしょうか? 又、逆に使用しないで作るとどのようなことが考えられますか?

コメントありがとうございます。 アルファ化米粉は小麦粉でいうグルテンの役割を果たすため、米粉パンが膨らみやすくなります。 アルファ化米粉を使用しないと、増粘剤やサイリウムと呼ばれる添加物なしには米粉食パンを上手く作るのはかなり難しいです🍞 (膨らまない、陥没する等)
