I am cooking on the Esse Ironheart, a wood burning stove. I think it very English to bake your own pie. But first I need to work up an appetite!
My videos are about searching for what England means to me. It is a personal journey.

I think you have a ghost, Richard. ;) When you were talking at 15:44 a hand appears and moves a mug in the top left of the screen!

That’s exactly what the original homeowner did just before he went and stood on the doorstep, where he died. He goes through the daily ritual of putting his mug down and goes to the door step where he collapses and dies. Richard spoke about him a few videos back - maybe he doesn’t like pie and went outside for some air.

One does generally add at least a little water to pastry. And this obsession with not touching it can be taken a little too far, but I would tend to avoid breathing on it, while not suffocating myself in the process. Loved watching; scenery; seeing the device in action and then being made to feel like a chef to boot!

I’m not going to give you any advice Richard, I am no cook. I haven’t made a pie for years and I tend to use shop bought pastry. So I applaud you for having a go and actually sharing the evidence with us. Some beautiful scenery on the downs especially as you were coming back down the path. Isn’t it amazing what a difference a bit of sunshine makes?

Hello there its just keep it all cool let it rest, in the fridge, shortcrust is half the fat to flour, simple. You are doing well. Any old scraps of bacon 🥓 use up with your leeks mixture. Or even some odd bits of 🧀 cheese

Brilliant! Well done for having a go Richard. 😄 You can rub the pastry with your hands but use just your finger tips as they are cooler than you palms. Less fat more fluid. Very entertaining, can’t wait to find out what you finally did. 👍

Perfect Chicken & Leek CRUMBLE. Add more Fat or Water & Roll out Thinner Then Cook for longer at about 200. I make Cornish pasties & cook for about 40 mins at 200 or until brown, but not burnt.

Really enjoyed your walk today. It’s like your older ones and it’s just FUN! Thank you Richard for taking me. Loved seeing all the berries for the birds I’m sure it’s chilling down a bit there. It is here (Arkansas) and you are further north than we are. Are your winters harsh? Ours aren’t to bad. A few really cold days but we are in the south so it’s not to bad. For your pie, they have a product out called Better Than Bullion and it adds a deeper flavour to your meal. They have vegetable, chicken and beef flavours. I think you’d like it, I don’t know why but I thought a leek was an onion. Maybe not as strong a flavour

You can't beat a good pie. Like Bonny says you have to blind bake the shortcrust pastry case first and white sauce in the filling would be good. A brave attempt. The three best pies I have ever eaten are 1. Minced beef and onion pie with mash and parsley liquor from BJ's in Canning Town, London (a bargain) 2. Steak and Fuller's London Pride steak pie at The Sanctuary pub in Westminster (pricey, but superb as you could taste the white pepper. None of that black pepper nonsense) 3. My Mum's Scouse pie. She cooked a vat of Liverpool scouse on a Friday. What we didn't eat was put into a pie on Saturday and the flavour really came out. Took me 30 years to get Mum to write the recipe down. Added Worcestershire and tomato sauce and pickled red cabbage on the side: fantastic. The question is with pies is: should it be shortcrust or flaky pastry? Loved seeing the old cast iron pan on the back of the Esse. My gran used to have one. So heavy that you get a work-out whilst you cook !!!!

Oh chicken and leak pie. How lovely. I'm more of a half pie girl. Stick the filling in the dish and just add a pastry top. Saves all the blind baking of the pie base. I'm lazy 🤣
