Can you control the rate and depth of the autopan and save it as a registration ?

No. Roland's Piano Reality Projection system breaks the sound up into parts and projects it through each speaker group automatically. There is no way to change that. The goal is to emulate a grand piano's acoustic performance and you can't do that with a grand piano. All you can do is customize the piano's performance.

When you say 'dead' room, can you tell me which settings are adjusted for that?

We set the Ambience to "Studio" and the Level to "0" - the most "dead" space we can create.
