Great experience po, nagcrave po ako ng lechon kawali. Ask ko lang po gaano katagal yung unang salang sa oven and at what temp? Ganun din po sa 2nd salang, lenght of cooking and temp, para po masubukan ko po. Maraming salamat po at God bless.

Hi Marvin, my name is Paul , I’m a commercial appliance technician very familiar with cooking processes through various equipment applications here in Melbourne. The Christmas Lechon was a disaster. This was a combination of incorrect cooking appliance and procedures. Lechon has 2 seperate cooking cycles. The meat and then the skin. Try using a Combi oven on steam which will cook the meat.after which immerse bottom half of the belly in water, then program the combi for 250 degrees dry heat to crisp the salted skin.
