I remember watching this back in the 60's with my mom. Mother always loved the way Julia kept giving the pig a nice little pat on it's bottom.

Regarding the glaze to quote Julia: "..the French would think this is dreadful because they don't like anything that they never thought of." Psyche!. Bravo Julia!👏

My first job in highschool was at a restaurant where they served a roasted pig for wedding banquets. So there was always a dead pig in the walk in cooler. They always freaked me out. This restaurant used marichino cherries in the eye sockets, which made it look rather possessed.

You have to remember this show took place back in the 1960s and a lot of people in America and the rest of the world had came from small farms when they were abundant so they grew up knowing the difference between plants and every animal that you ate but in today's world in 2023 will you only see it process and cut and plastic and style plant packages. People don't equate that bacon actually coming from an animal which is kind of weird! I once knew a lady who says she eats absolutely no meat at at all under any circumstances and when we went out together and she placed her order with eggs she insisted that her bacon was very crispy! I know! I said nothing because it's just stupid but she doesn't put the 2 together and she's not alone!🤷‍♂️

What courage she had to do this. Just makes me have more respect for her, but watching it is pretty intense. To the people who are grossed out, that little pig died in one second. Think about how that cow whose flesh you are gobbling up died. I cannot imagine any TV chef these days having the courage to cook a baby pig. They'd be slammed on social media by trolls eating hamburgers.

Google suckling pig. There are at least 10 different chefs with their own videos: grilled, offset, hot oil, offset etc. I even found one in Vietnamese.

How in the world would you know this piglet died in 1 second? This pig more than likely died terrified and afraid. They could have done without putting this on youtube. Just one more way of desensitization.

Lechon, Filipino style whole roasted pig, is wildly popular and I’ve had it so many times that I barely blinked watching Julia prepare her pig. But since I’ve always seen lechon cooked either outside on a rotisserie over the fire or in a professional kitchen, I found her home cooking tips very helpful.

She had the crew at the Boston TV station where this was filmed. There is a behind the scenes photo that is a side view of her standing at the counter looking at the camera. There are 5 or 6 crew member sitting on the floor behind the counter away from camera view taking items or handing items to her.
