⭐️ Roasted eggplant is an easy, delicious side dish you can serve with most mains or use to make other wonderful eggplant recipes.
⭐️ Ingredients
2 medium eggplants
1 tablespoon extra virgin olive oil
⅓ teaspoon salt
¼ teaspoon black pepper
For the seasoning
3 tablespoons extra virgin olive oil
1 tablespoon red wine vinegar or other vinegar
1 clove garlic minced
¼ cup parsley finely chopped
¼ teaspoons dried oregano
⅛ teaspoon red pepper flakes
¼ teaspoon salt

This recipe is very European. My Italian mother makes zucchini this way too, but she lightly fries the zucchini first. Baked is just as delicious!

About 1 or 1/2 cup of parsley About 1 or 1/2 cup of olive oil 1/4 tsp salt 1/4 tsp red pepper flakes 1/4 tsp oregano 1/4 tbsp red wine vinegar

Absolutely beautiful i used other drizzling mixture to pour over as i didnt have those ingredients but Absolutely the Bomb didnt last that long at all from oven to plate to mouth dodnt even get a photo.. 😢 but my family enjoed it immensely.. thankyou.. Ive written out what i used.. Again This was absolutely beautiful i just cooked this, this morning..... The drizzle over i used was Garlic, Chives, Cayenne Pepper powder not a lot just sprinked over, Italian Herb Blend , Onion Powder & Wild Rasberry Splash Balsamic Vinegar from Tweed Real Food Brand. & Extra Virgin Olive Oil & Salt..... 🥰🥰

One of the BEST eggplant recipe🍆: slice the eggplant thinly then make a batter with chickpeas flour and water with some salt and pepper. Then dip the sliced eggplant into that batter and deep fry on medium flame until golden brown. And then you have the delicious eggplant snack 😋😋
