I have been using an Air Fryer / Convection Toaster Oven to roast coffee! After roasting 20+ batches, let me tell you seems to work, and what doesn't. In this video I produce a really delicious 300 gram (3/4 Lb.) roast of Kenya coffee in 15 minutes.

I'm trying your method now and on small batches of 100gms (3.5oz), I can get the beans roasted within 11 minutes. I tried using a fine metal mesh flour sifter and also a thin aluminum baking tray (both worked great) and the beans are spread out evenly. I also use aluminum foil to cover the glass but with a small hole to observe the beans as they roast. I use a powerful LED torch to observe the beans and I never open the door to maintain the oven temperature. My oven can go over 500F but I kept it around 480F. So far the batches I roasted are very promising, I shall be retiring my rotisserie wire drum as it takes too long to roast.

thanks for the tips. I don't have a convection toaster, but I begin my roast in a regular toaster oven before moving the beans to my Whirlypop. It significantly shortens the time I am standing over my gas range.

Thanks for all you do Tom to help home roasters! I think a "Barbi-Q Grill Mesh" might be a good choice to use rather than expanded metal. It's a high temp mesh screen for outdoor grills. Cuts to size easily with scissors and the edges won't cut your fingers like expanded metal can. Also, I don't like the idea of non-stainless steel in cooking. Anyway, thanks again, great stuff!

This is my first time ever home roasting. I thought the cast iron would be good.... Until I thought why not my toaster oven?? So I tested both ways, 1/2c of green beans and the toaster oven wins hands down!! The roast is sooooo much more even and there are no burnt beans... The cast iron was not the same at all... I wish I could share a picture side by side... THANK YOU FOR YOUR WALKTHROUGH AND SAVING ME MONEY 🤑💰.. I was really considering buying a home roaster after I saw the results with the cast iron... I'm sure with more time I could perfect it but the toaster oven is the ticket 🎟️..

This is my roasting setup in my other channelkzfaq.info/get/bejne/hMd2hrylxLO-d6s.html. Been using my toaster oven setup since 2018 and I have excellent results with it. I recommend you wrap the glass with aluminum foil and cut a small hole so you can observe the roast color, the aluminum foil on the reflective side facing inwards will prevent heat from radiating out from the clear glass and maintaining a higher roast temperature. I still prefer using the rotisserie as it gives me a very even roast.

Article shows no mention of oven temp. Also, turn off fan when opening oven for less heat loss. Good vid. 🙏

Thanks for sharing this experiment. When these rotisserie style/toaster oven format air fryers started to appear en mass, several with drums, that was the first thing I thought about as well, was potentially experimenting with one to roast coffee. I have a FreshRoast 540, which I like a lot, but have to roast at least a every other day, due to the small capacity. (Hoping to get a Razzo extension chamber soon though) but your tray idea for bigger batches is interesting. Love Sweet Maria’s green beans by the way, about to order more soon.

How do you remove the chaff? Just shaking it around during your fan cooling at the end?

Yup. Putting it under a fan blowing away from the screen will blow all the chaff off. If you don't want to go that route, just pouring it between two large bowls will work too

Thanks Tom! This is pretty awesome. I am going to try this. Anyone on the channel know where to get the right wire mesh to make the basket hole smaller? I want to put one in the bottom and 2 on the top to trap the chaff.

very cool video. if you have the time, could you elaborate why a slow bake is preferred to a quicker hot roast? i know it takes above a light roast to develop caramels and sugars, but wouldn't they develop in a slow roast, or are they like sweet potatoes that need high heat to convert to sugars?

Tom will chime in here if he has time but the air fryer setting seemed to work as well but the bake setting with the use of the fan worked better due to it's ability to produce a higher temperatures.

I’m so disappointed the drum didn’t work. I chose my air fryer model pretty much based on this. That’s why we should do research before buying 😅

It takes guts to roast in the house. It takes guts to take the air fryer and coat it with a coffee patina. Buying one at 100 instead of 350+ for the Behmor 1600 is a good idea. The amount of work you have to do equals the behmor 1600 experience as well.

what about the smoke and that lingering odor that is not good? you do that indoors? or even if done outdoors the odor will remain in the air fryer - plus roast looks uneven

Too much lingering order can mean that coffee oils have a higher chance of building up in the machine. Most roasting methods that don't have a chaff removal process will leave beans looking deceptively uneven, especially on video since the chaff will still be clinging onto some beans. Hey there! We responded to an earlier comment if you need more context, but Thompson found it hard to get the roast to come in under 25 minutes, and that those batches did not cup as well as the flat air fryer basket/tray. A lot of folks will go outside with the roasted coffee and pour it between two colanders.

I like the idea of convection vs conduction. I think it’s possible for the product to absorb the salts of the metals when they are hot. Any thoughts on this?

Hmmm. We can't say for sure since we aren't experts on metals but we do know these appliances were designed for food much more absorbent that coffee so we think it should be pretty safe.

The roast development was too slow with the rotisserie, which wasn't an issue with the tray. In theory it would work similarly to a Behmor, which gets good results, but it didn't work out that way.

Great questions. Espresso can be as dark or light as you like it but generally folks roast espresso a bit on the darker side. We don't have any time guidelines but suggest starting off with roasts around Full City or Full City+ (right before 2nd crack).

Curious question, considering we have electric air fryers which are technically ovens with a very high airflow, would it work too?

Not sure but it's worth a try. Folks have roasted in low airflow ovens for years so it seems like a good idea.

could you elaborate more on why the rotisserie did not work? did it spin too slowly? seems like if you could get that working, the consistency would greatly improve & would yield a poor man's Behmor result ... i've heavily mod'ed a bread machine & am using a heat gun (Corretto) to get some fantastic roasts, but this is interesting

You can give it a shot for $20 - cost of the drum - but I cannot get the roast to come in under 25 minutes, and the roasts cupped worse than all of my batches on the flat air frier basket / tray. I think my article linked above explains - but please comment in that article if you have any thoughts. I dont give up easy so I'll try to find a way to get the drum to work if I can...

@@bamagtrdude I still hope there is a way but I have run out of ideas for now. Im sure someone can figure out how to do a rotisserie roast in 15 minute or so... I'm going to add an illustration to that article today that might help how different the air flow and heat transfer is in a commercial drum roaster vs this type of mesh drum too.

@@SweetMariasCoffee Tom, the only thought I had is to drill a hole into the side of the oven to add “supplemental” heat via some other heat source on the rotisserie setting (ie heat gun or maybe a propane torch) ... that’s fairly invasive, and i dont know if these ovens have a temp sensor that would shut it down, but somehow adding more heat would improve the roast ... the spin of the drum seems fairly slow, too - that’s one nice thing i’ve noticed about the newer Behmor
