Once you turn off the tank valve there is still a small pocket of tank-pressure gas at the regulator input. As a result a slow leak will not show any pressure loss at all until that pocket of gas has been leaked away. So you will get a period of constant pressure, then the pressure will start to drop. One way to avoid this delay is, after the tank valve is closed, while watching the gauge, slightly crack open a valve on the stove just until you see the gauge reading start to drop. Shut off the stove again, and now if you have a leak you should see the gauge reading start to drop right away. Of course, with a small leak "right away" may be several minutes and the rate at which the reading drops will be slow, but the gauge reading should start dropping immediately rather than delaying until the regulator inlet drains.
