you really have to admire someone who only has 14 cows, but makes products from them that have such a high end market. quality over quantity is the essence of luxury, even when it is humble, and i'd love to see so much more of this in the world.

Looks awesome! I couldnt help but chuckle at "We dont use anything from greenhouses, you have to rethink nature" 2 minutes later "this cheese aged in a bunker for 6 months" 😂

Cheese isn't comparable to vegetables. Vegetables are a nature's product, whereas cheese is man made, you cannot cheese on trees. He was refferring the "no greenhouse concept" obviously only to nature's products. And still, his concept at its core is the traditional cuisine of the Alto Adige mountains (Dolomites), and there (and everywhere else in Italy) cheese has been produced since millennia.

Michelin stars used to be given only after longer period of solidness in every relevant aspect of the restaurant and it was a measure and promise of consistency. I'm not sure what I think about their trend to give stars sooner and sooner even to pop-up type of places in some cases

I was going to write the same comment too. I would love to try something of this quality but I think I'd leave disappointed if I needed to stop at a fast food joint on the way home after spending 685 euro

@S3Lifestyle The only 3 stars that I've been are there and Le Bernadin, which I loved. So y'all might not have the same taste based on your review of Le Bernadin. But the service is impeccable at La Pergola so you won't have to worry about that there
