Just spent two days making pasteles with this recipe. I followed it as closely as he said. The flavor is delicious - I used his wet rub recipe for the meat. My only comments are that with the 5lbs of Calabasa, the pasteles came out too mushy. After several attempts to make it more firm, I ended up adding a total of 6 platanos. Also, he said that this mix makes about 3 dozen pasteles, but the mix is ALOT. I ended up with masa for 60 pasteles, and I was not making them small (not a bad thing, but if you're not looking to make that many, then maybe half the ingredients). I had originally made 5 lbs of pork (which was enough for 30 pasteles), but had to buy more meat to use up the masa. All in all, I will definitely be making these again, just with the adjustments in the quantity of the ingredients.

I also add the caldo from the meat. I try not to add water to meat. I sweat it slowly then I add the rest of my spices and the caldo comes out thicker wow and it makes it better. Love pasteles❤❤❤❤
