This Cucumber Tomato Avocado Salad recipe is a keeper! Easy, Excellent Salad with a light, flavorful lemon dressing and freshness of cilantro.

We sold our house and moved in with our parents last week while we search for our dream home. Working in Mom's kitchen is quite a treat - so much beautiful natural light, not to mention it's huge!!
SALAD INGREDIENTS:
►1 lb Roma tomatoes
►1 English cucumber
►½ medium red onion, sliced
►2 avocados, diced
►2 Tbsp extra virgin olive oil or sunflower oil
►Juice of 1 medium lemon (about 2 Tbsp)
►¼ cup (1/2 bunch) cilantro, chopped
►1 tsp sea salt or ¾ tsp table salt
►⅛ tsp black pepper

I’ve tried this salad two ways; firstly, exactly how Natasha made it and second time around I made the salad but left out the avocado, let it sit for a few hours for the flavours and juices marry together and just before serving, I then added the avocado. In my opinion, the second method was definitely my favourite. The intensity of the flavour was far greater. Absolutely delicious.

Lester Jones Jr hi, I mix 1tsp of organic turmeric powder with 8oz of water, in 15mins um pain free and it detoxifies you as well, organic turmeric powder has sooooooo many health benefits, as well as BRAGG Apple Cider Vinegar. I made this last night! It is really good! I love avacado, but my daughter doesn't, so I mixed every ingredient except the avacado and saved some for her. I added avacado last and we were both happy!😊

You are so right! The cilantro really adds GLORY to this salad! I kept tasting it to see if I wanted more salt and I couldnt stop eating it! I really wish I wouldve made a bigger portion! I was just getting ready to dig into a Caesar Salad when I happened upon this video. FANTASTIC! I had an avocado in the kitchen that I was sure was close to ripe. I usually eat them raw or make my version of guacamole but your tutorial had me chunk half of it up and add it to my salad. What a treat! And also your explanations of the nutritional properties were just great. I took your advice and saved the other half (with seed) for use later, maybe with another of your recipes I bookmarked for the Italian cucumber, tomato salad. I made this for my family, they don’t like many veggies. It was a huge success! The salad really is scrumptious and fresh. I did skip the cilantro but oh my gosh!!

This is a great salad, thanks, I have enough for one more severing. I agree avocados are the best, I also tried the chicken Madeira which also great but didn’t let the sauce cook down enough but will try again.
